I think a chewy soft cookie would be better for an ice cream sandwich honestly. I want a cookie that is going to hold up when my ice cream starts to melt and I don't think this is it lol. Emma's goodies makes a really good soft and chewy sugar cookie that I think would be best for an ice cream sandwhich 👌

You could be using the wrong kind of butter, especially if you're measuring everything religiously with actual measuring cups and spoons. Like a tub of butter or "butter" is always going to make cookies that spread out too thin. Another factor could be that many recipes require chilling the dough before making the cookies. And if you aren't using proper measuring cups & spoons then you're definitely adding too much liquid. My grandma has the dame problem with some foods.

Don't knead the dough for too long, and make sure you're using the right settings on your oven. Weigh the ingredients, compression can make a big difference with flour, so volume isn't necessarily reliable. Try a recipe that doesn't use water, milk, or other liquids to see if that's the reason. (I have some recipes if you want to try them, it's all metric though.)

They don't turn out like this, but sometimes my cookies end up too soft if I oversoften the butter. Like I'll forget to set it out to reach temperature and I'll lazily microwave it until it's liquid.

Here’s a good recipe for cookies 1/2 cups melted butter unsalted or salted just don’t out salt 1 cup brown sugar 1/2 cup white sugar 1/2 cup flour 1/2 tsp baking soda 1/2 tsp salt 1cup Chocolate chips I egg Some vanilla Bake at 160c For 10 mins

As a person who went to college and took a couple of culinary classes, I felt physical pain when they said “Add H2O”. So many batter based desserts and baked goods suffer from H2O. If it can be helped, make the batter less solid with more milk instead

I've learned from experience that they come out like that because the butter was melted too fast. You can't rush and use microwaved liquid butter. You have to let the stick sit and get soft the natural way.
