The crispy little bits you get when you smash it down on the pan, you don’t get that with a pre smash, there’s just no way to do it unless you smash it on the grill. Try it both ways and you’ll find the pre smashed to have far less of those crispy edges and bits you want.

Smash burgers don’t “squeeze out the juices”. That’s exactly the point of them, you press them while they’re cold, before the fat has rendered so it remains inside. High heat and fast cook time allows a full cook, moisture retention, and a good sear simultaneously.

It gets dry if you overcook it or if you smash it after it's already been cooking. I make both ways because some like it less crispy, some like it softer -but I can tell you for sure they aren't dry. Second burger looked like it went too long on the first side. First "dry" burger looked like it didn't get a good sear so probably too cold/too long. You want to flip when the juices just start to turn from red to clear not when the whole thing is like that. A hot surface and not overworking the beef in the pan or when forming balls is key

When he has that burger lifted off suddenly all that grease and fat is gone. It's called editing. He needed to make a point so he either pat dried the first paddy off camera, or let it sit in the open air off camera.

Smashing a burger does *NOT* squeeze out all the juice. When making a smash burger you smash the beef when it's still raw, and the juices (which are mostly water) are bound inside the muscle fibers. Do an experiment -- take some raw hamburger meat and squeeze it as hard as you can in your hand for a full 20 seconds (not just one pump like you'd do on the grill). Did it become dry? You only dry out a burger if you cook it too long or if you squeeze it once it's partially cooked and the protein denaturates. How hard you squeeze has nothing to do with it, and if your burger is dry, changing the squeeze strength won't change anything.

I’ve learned the trick of getting the meat close to room temp and then letting the balls rest on the grill for a couple minutes before smashing. That allows all the fats inside the ball to warm and then when you smash, ZERO juices will leave the patty.
