MasterChef finalist 2021 Mike Tomkins cooks two steaks using the exact same method.
He allows one to rest while cutting into the other straight away. The difference? The rested meat looks much more tender, juicy and perfectly cooked all the way through.

There is a lot more marbling in the rested steak before the cook so it is not a good comparison.
