It's not uncommon for me to eat breakfast for both breakfast and dinner on the same day. Something like a full English or American diner breakfast in the morning and then eggs benedict for dinner. It's hard to beat breakfast dishes.

My husband (born in Arizona, Mexican parents) liked your video. That's highest praise since he is very picky about anything Mexican. We made a variation of a couple of these for breakfast. Chorizo, potatoes and onions, eggs, and the corn tortillas with oaxacan cheese melted on them. Serve with tomatillo salsa. Best breakfast ever!

I love this simplicity. Everyone thinks this is hard, but it’s so simple to produce. It’s like guacamole, you can do a case in 20 minutes and worry about the rest of your prep. Joy is making stuff fresh, but we all have time limits, give it your best and you will be happy.

The Mexican chorizo has guajillo chile added. It is the Aztec addition to the Spanish chorizo.

After learning Italian cuisine I realized how similar to Mexican food it is, more sweet, then got to know polish and I realized that food really equalize humanity each culture adds a special flavor or technique that enhance their ingredients. You are truly, a food innovator. I can see food evolving in your hands.

Do a “Back 2 School” special. You know: Adult bologna sammich, homemade snack-pak, box drink. Something like that. Or call it like School-Yard Classics: Make two items kids would trade with each other like a ZAGNUT for a bag of Doritos. (I loves me a ZAGNUT)

Eggs and chorizo was a staple in my home growing up and still is till this day. Abuelas everywhere are proud that you are making guacamole fresh my guy. Thanks for bringing in Mexican culture to the youtubes!

Love your descriptions of the flavors, textures and overall experience! I make large batches of lower brow tacos for myself(egg, hashbrown, crumbled breakfast sausage and cheese, on a flour tortilla), which I freeze then reheat. They are decidedly not as good when reheated but they're like 85% of the way there. I'll have to give these a try!

Ok, tried the refried bean and bacon taco today and it was phenomenal, even without the pickled red onion which I haven't made yet today but will for the rest of my breakfasts this week. I am not sure why I had never doctored up canned refried beans before, but that is a game changer! The crispy bacon pieces were the perfect counterpoint to the soft, creamy beans and egg. My new favorite breakfast!

I keep pickled red onion in my fridge. I make mine by thin slicing red onions and putting them in a container with fresh squeezed lime juice. They're easy, and delicious. You can add sliced jalapenos as well, but not everyone in my household likes spice, so I keep them separated.

Hey, Lag! For a simple guac, just scoop a couple of heaping spoonfuls of that store bought pico in with the avocados along with a healthy pinch of salt. It's our go-to. These are some great breakfast ideas! Thank you!

Bean and bacon is a legendary combo. We have a taco shop around me that makes them. They also make a hippo taco which is chorizo, egg, potato, bacon, and cheese

Anyone can make in 15 minutes before they get to work??? Time to shred the potato, grate it, squeeze out the water, heat the pan (all of this 5 mins?), 8-10 mins to crisp the first side (quoted from the video), 2-3 mins frying on the back side, break apart and repeat for 8-10 minutes, fry an egg (3 mins?), building the taco (2 mins? Assume people just don't have chopped coriander to hand) and all of this can be done in 15 minutes? Just doing the two sides of the potato alone takes 16 minutes, as quoted in the video!

Have you seen the breakfast smash tacos? Same idea as a smash burger, but you smash sausage meat with a taco instead. Seems like it would fit in this video pretty perfectly.

I know that you can't get proper mexican Rancho made chorizo up there in the USA but if you loved that taco with that supermarket quality chorizo you're going to lose your mind if you ever try the real deal. Great video, thanks for the inspiration Bri!

el Pato is my go to for a green sauce if I am traveling. Typically easy to find, tasty and not too strong in any particular flavor.

I just made the hash browns, and they were better than any hash brown I’ve ever had. I fried up some bacon while I was shredding the potatoes and then did the hash browns in a mix of bacon grease and vegetable oil. I’m definitely gonna try making the tacos tomorrow.

My go-to non-stick pan is hex-clad. Used only for eggs. Had for a year. Advantage you can use metal utensils as long as you don't really grind those utensils in. Pull the handle cover it's now oven safe.

The point about the store bought pico bears repeating. Sometimes good enough is good enough, especially with a time crunch. Put your time and effort where it will make a bigger difference.

You are actually closer to authentic by using corn tortillas than flour for tacos, flour are used mostly for quesadillas and burritos in the north of Mexico

Would enjoy seeing a video on different pizza dough hydrations. Some Italian pizza chefs here on KZfaq claim that super high hydration dough results in a crispier crust when cooking at high temp (~800-900F). I’ve tried it and the result was not great. That could, however, be due to my execution.

In the first taco you put the cheese in the outer part of the tortilla, yep, corn tortillas have an inside and an outside.

I do almost what the first taco is but make a fine dice of potatoes, fry them and then add eggs and cheese on a home pressed corn tortilla covered in New Mexico red chile sauce. One could think of it as an inside-out chile relleno but red.

The best breakfast taco I've ever had had smoked sausage for the meat component -- hot dogs / sausages are *very* common in certain parts of mexico, even moreso than tacos in some places. Anyways: smoked sausage medallions, scrambled egg, raw white(?) onion, cilantro, and some generic habanero hot sauce on a tiny flour tortilla. One of the best things I have ever eaten

Chorizo is made from, among other things, the pancreas, lymph nodes and salivary glands of hogs. Very popular here in Texas but I can’t bring myself to swallow it.
