People don't get working in a kitchen is eight hours in a 95F kitchen, no air conditioning, that doesn't stop the whole shift and at the end of close its another hours of cleaning and basic prep for the next day.

I wasn't a chef, but a dishpig for only six months. So hard. So very hard. I thought I was in good shape... but every night I was absolutely ruined. Then, the cleaning (like you mentioned). So much respect for the back of house. Absolute beasts.

Oh I get, I've been in a (working) kitchen just enough to know I wouldn't last 5 minutes as a chef, not the most junior, not the most senior, or anything in-between. As Clint Eastwood once said "A man's got to know his limitations."

Watching the Bear.. all I keep catching myself thinking is "this is the continuation of and next part of Lip's life" 😂 frigging Shameless. God I miss that show. Working the kitchen is madness. The heat. The speed. The precision and co-ordination.. the skill.. chefs are incredible people. ❤

The Danes being super fit is a recent development though. Back in the 1980s lots of Danish men wore their bodies out from heavy smoking+drinking, poor diet and zero exercise. But the new generation are generally much more health-conscious and also more vain 😉
