Previous letters can work for you. But see, if you're applying for Erasmus, your Erasmus LORs should be written related to Erasmus program.

It depends on program requirements. If it is written in guidelines to follow a europass format then must follow that. But even it's not written it is recommended to go with europass in Erasmus.

Get a certificate from your university and apply. They give a certificate before orientation degree.

How many programa of Erasmundus scholarship we can apply... I am applying to Erasmundus program fire safety...In application online form, they are asking for other scholarship program, when I am inserting my programs, I was able to insert only 2, which make me worried as I am planning to almost 5 program. So still we need to apply for only 3 Erasmundus program?

You can apply to as many programs as you want. Ghent university's portal is not updated. You don't need to tell them how many programs you're applying for.

You can upload domicile and check the program guidelines if they allow to take one or more recommendation letters from work experience side or only academic.
