He should be very proud of all his hard work that got him to where he is today. He seemed sheepish about having to explain why he charges so much. I wish I could tell him to own it, and never feel he has to justify it. I used to have a cake decorating business....custom cakes take hours and sometimes days. Lots of labor and I used the best ingredients. I undercharged for every cake because customers would complain about how much a custom cake cost. I lost money on every cake, and never turned a profit...having to shut down the business. I was young and foolish back then, and I hope he'll never cave to a complainer who doesn't want to spend what his time/business/food is worth.

Same, I’m actually in the middle of finishing up my apprenticeship to become a chef as well, but seeing him already owning a restaurant at his age is unbelievable, it also makes me wonder what I did wrong

It's not per dish, they're basically appetizers. Seems to be around 2kg of food total, so you are paying for 1.5 dishes, not to mention you may only enjoy 5/14 dishes for example. It's ridiculously overpriced for what it is, although there will probably be a very niché market for it I guess.

OntarioFishing15 You can assume that each person gets their own plate. So she is correct in that it is a very fair price. It totals out to be $11 per plate which, if it’s fine dining, is pretty good.

Tbh I have been to very posh restaurants where they try charge $155 alone just for one tiny meal. So to get a 14 course tasting for $155 it's doesn't sound as bad as you'd think. I mean it would be an evening experience, I doubt it would just be something that lasts an hour. And New York in a way for something like that is actually cheap when look at the small size meals at proper posh restaurants. You pay hundreds of dollars for a "wine tasting".

He/she not really paying for the food, he´s/she´s paying for tasting the food. Or in other words, the experience. Going to a tasting restaurant is like buying a painting from an art exhibit. I respect it but I´ve never really cared for it either. There was this restaurant, Alinea, on chef´s table (netflix) that I REALLY wanna go to someday though. They had floating food. Otherwise, If I was in his position, I would´ve opened up my own little cosy cafe with healthy and affordable food. Unfortunately, my cooking skills are limited to recipes lol.

You're not paying $155 for a tiny dish. You're paying $155 for 14 courses prepared for you one at a time by a professional chef. Tasting menus take a lot of time and work to execute. That is one gifted teenager.

Bryan Carrillo well, we may have to agree to disagree here...a tasting menu is a well orchestrated succession of dishes that require skill and high quality ingredients and to be honest at about ten dollars a plate that's very reasonable. If you get tapas in Spain it's a similar concept, this is not meant for daily dining this is an experience where you get to know a chef, their journey and their aesthetic. If food innovation isn't your bag then by all means don't ever go to this kind of thing, but I've sat at tastings and spent significantly more, some of those dinners were amazing and each one included marvelous time with family and friends and interaction with the Chefs themselves. If you enjoy food and its creation I'd suggest at least once in your life giving it a go, forget the price and remind yourself that it's an event as much as a meal. It leaves the realm of practicality behind and ventures into whimsical territory the same way a musical concert would. For a pragmatic person I can understand the Wtf-ness of it all, but then again, no one is forcing it! I respect your opinion and understand your view, but if you can, try to imagine the other side of the coin! Have a lovely day ✌🏻️

in the food industry noone invest into a 19 year old chef. Doesn't matter how much skill he has. Even chefs working in 3 michelin star restaurants since 10 years struggle to find investor for the own idea.

I really appreciate how humble he seems to be despite being more successful than most people his age. It reflects a lot of maturity on his part, plus major props to him for being so dedicated and ambitious at such a young age. It’s always great to see peoples hard work pay off.

I am amazed, at the same time a bit envious, and also strangely proud of him. I'm 18,and have no idea what I'm gonna do next in my life,what career am I gonna follow etc. Yet,he had already set his mind on what he wanted and actually achieved it, and I think he didn't even go to culinary school,because he didn't mention anything about it . Good job mister! This truly is amazing.

It be basically 10-14$ per dish in 14 course meal which is ok some people pay more on their chipotle/mc Donald/fast food alone so 155$ ain’t so bad is just a one time thing for a date or to spoil your self and if don’t like it then don’t do it again simple as that lol.
