Keep the lids on and don't open for a year, it will marinade and get hotter. Then add vinegar to thin it out bottle and wait another month, will be correct consistency and heat.

I have made hot pepper jellies and that happened. They were much hotter after a couple months. I love peach habanero, so good. Though we also made hot pepper jelly with grape juice and Thai chilies

I love spicy, but the thing that annoys me with the hot sauce trend is that there's no flavor, it's usually all about trying to make people visit urgent care. I'm glad to see this was more of a culinary adventure! Thanks!

Just for future reference... It's FAR easier to remove the seeds from the peppers before you soak them... I know you were just following the directions but they led you astray.

I have this exact kit and the other thing about the instructions that lead them astray, putting in the peppers whole. I did what they did the first time and I also got a thick gloop (when chilled in the fridge it was too thick to get out of the bottle), but my second go around I chopped the dried peppers into pieces before rehydrating and cooking and this help make a smoother and saucier sauce. I think the whole peppers end up with longer fibers more prone to forming a gel or mass that leads to a thicker consistency.

As a cook and someone who has made hot sauce. Do not worry about following recipes or whether it needs sugar or not. Just throw in whatever you want and make it your own! That goes for all recipes ever.... Unless you're baking, then it has to be exact. But cooking is more free form and fun! I would love to see y'all try this again with your own flavors. You know the basics, it needs peppers and vinegar. Now make a nice chipotle garlic or cayenne truffle! Make a sweet and spicy sauce, which does need more sugar! Also. Hang on to those bottles and put them in a dark cabinet. Try them again in a few weeks and their flavors will be completely different.

I would be worried about the type of blender they have and the steam of the heat causing a build up of pressure than the fact it might melt.

I have a friend who loves baking but doesn't cook anything and I'm the exact opposite, except I radiate chaotic energy in my kitchen and never use measurements for anything. whenever we cook or bake together it's fun to annoy him by just measuring with my eyes lmao

I always think that’s funny because I eyeball a lot of stuff and I really only bake and don’t cook. Once you kind of know the “rules” of baking you can figure stuff out.

@@kieransween1678 Exactly, the way you figure out the measurements for a recipe (at least for things like spices, salt etc) is that the cook measure it in their hand, and then you see how much it is. I suppose most pro chefs (and many amateurs) can measure quite accurately without a measuring device. And cooking or baking, you are working with "living" ingredients that will vary, so you always have to adapt. Even more so with baking where humidity and temperature have a huge impact on rising.

Did the kit’s directions say how long to soak the peppers for rehydration? Family recipes we use call from overnight soaking/rehydration of dehydrated fruits and veggies. I’m thinking that the 2nd sauce- the Caribbean one- was thicker than the others because it also had dehydrated mangos in it- more dry, fibrous material in ratio to liquid, so even harder to “sauce”. We also use something more like a food processor than a shake-blender - so probably that is another reason I’m used to seeing this kind of thing come out a bit thinner. Of course, the reason you do DIY is so you can have it the exact way that you like it- thick/thin, hot/fruity, smooth/chunky, etc. - so keep figuring out what you like, and do it for you! Obviously it is about having something you enjoy, not making “the best commercial stuff”

I had never heard about blenders exploding if you put something too hot in them so I asked my dad (a chef) about it and he said that, yeah, the glass could shatter if it isn’t tempered glass. If the blender is plastic it could melt but wouldn’t explode

If it's too hot you need to let the steam escape, otherwise the lid can pop off. You'll see many chefs blending things with the hole on the lid open and using a towel to cover it, so the steam can get out but you don't make a mess.

A suggestion for next time you need to put paste into a bottle: Use a plastic bag with the corner cut off. Like a piping bag. It makes the process significantly easier lol

If you do try it with fresh ones, try it with grilled ones! I love the flavor and it makes peppers less spicy too, so I can actually handle it 😂

Hear hear! If you ever have more peppers than you can use from someone's garden, this is the best thing to do with them! I usually make it with some jalapeno and habanero and only occasionally add a dried pepper for flavor. If I do, I rehydrate them in boiling water which really helps.

Update: Watched the rest of the video, absolute masterpiece. Laughed hard at bottling sauce #1, at Evan's face when he guessed the timer dead-on, and even harder at bottling sauce #2. The end-credit scene was haunting and confirmed that the bottles are the anti-heroes of this video. And a legitimate not-clickbait title! Perfect way to end the week, thank you both.

In my opinion, a fruity sauce or flavoring is always an important option because so many fruits turn out to be complementary in both flavor and texture (especially when adding citrus to meat).

I never remove the seeds, only the stems. Then blend and pass through a fine sieve. And you can't forget to add a few garlic cloves for a true salsa. Also, dried peppers are thirsty bois, they might need more water than expected for blending.

@@Azn4Life92 That's what's commonly stated, but that's actually incorrect. The seeds don't really add heat, it's the white strands of pulpy material surrounding the seeds that hold most of the heat, most people scrape that away when removing the seeds, but the main reason for removing the seeds is that the seeds tend to impart a particularly bitter taste and don't blend as well.

lol 2.5 mil, the maker of those sauces is lying, they've just added each chilli up, that's not how scovilles work. Would be amazed if its even 200k. ghost pepper is like 1-1.3 mill and its been watered down with other chillies, water, vinegar etc

Also each pepper isn't the same spice level. It is a range. When making a small batch the variation of spiciness is the greater than a large batch. There could be some batches that are super spicy and some are still spicy, but less so.

You'd have to be adding in pure capsaicin extract or piles of hot peppers to get even remotely close to that, even then that's not exactly a sauce you'd be entrusting newbie sauce makers to create at home cause they'd end up creating some sort of tear gas room out of their house or something with the fumes just from creating something that powerful.

You can cut the peppers open lay them flat and scrape with the dull of the knife to remove the seeds.

Re: Plastic Have you thought about getting one of those under-a-rolling-chair office mats? Alternatively, those puzzle piece floors for kids rooms (though I would wonder if you might want to put a layer of plastic under those in case something gets through the cracks). I say this because I too have carpet in my craft room, and one month in I tripped while cleaning up and spilled watered-down blue paint all over the floor. You'd think that would be better, but since it was more watery, it went much farther and caused far more spots.

@@TheQuark6789 that's what they showed, and while it's the cheapest + easiest option that covers the widest area, it is also noisier, which is less-than ideal for streamers. Hence my suggestions ☺️

You don't want to put hot things into a Magic Bullet because it could blow the sections apart or leak. I think it depends on how tight the seal is on a normal blender, as well.

Hello! I’m a salsa maker♥️ When I use chile ancho I use scissors to cut the top and shake out the seeds before rehydrating. When using dried chilies rehydrate in hot water (I use simmered water) Oh! Try making your ancho salsa with instant coffee! It’s yummy 🤤

If you ever need to bottle something like this with that kind of thickness again, try using a straw in the middle of the sauce to allow for more air escaping the container.

Apparently, if your blender has a high enough speed, it can cook eggs via heat friction. These as possibly the lightest, fluffiest eggs one can cook...whilst perhaps also turning the blender into equally epically difficult to clean.

2,500,000 scoville rating for a sauce mostly containing habanero's which are somewhere around 250K, and a little bit of ghost pepper which is usually around 1M? I think the makers of that kit were being a bit ambitious...

in my country, we don't remove the seeds, they are the main source of spiciness. But good to see how you make it, we mostly use mortar and pestle to grind and/or cook the sauce in a wok.

When making pozole, my husband removes the seeds prior to rehydration. it's also better to use boiling hot water but whatever you do, DON'T BREATHE IN. 😅😭

you guys should try to do fermented hot sauce, fermenting the chillies really adds a lot of nice flavours to the hot sauce. Also super easy since you just use whatever fresh chillies are your favorites, plus salt water. (obviously you can add whatever else you feel like to customize your hot sauce flavor)

Didn't y'all add less ghost pepper to the last one? I think adding hot water and giving them a good shake will help thin it. Also a second blend would have helped too.

Isn't it the fat in the dairy that works best? So cream is better. Ice cream is even better because it is cold. I haven't watched the videos you mentioned, but I vaguely recall the details from somewhere. Maybe a little Mythbusters and a little Alton Brown.

when the blenders popped up with the discord call joined sound, it threw me off guard so much cus i am actually in a discord server call alone right now so if my boyfriend wants to join and talk with me since he's not going okay atm, so that sound in the video made me believe for a second my boyfriend had joined the call XDD

main reason not to blend hot liquid is that when blidning/mixing/shaking it can expand/steam and blow off the lid/spray you when lid is removed. also to thin it out you can use some standard white vinegar. dont need apple cider vinegar

Be glad you eve .got bottles. I got a diy hot sauce kit and it didn't have any containers. Fortunately i have a vacuum bag food sealer thingy so now my freezer is full of hot sauce 😂

Buy a roll of linoleum for the craft room. Protects the carpet, is quieter, won't rip and can be rolled up and used in other locations.
