This Easy Sausage Pie makes a PERFECT dinner for the whole family!

Sausage, carrots and potato cooked in a creamy mustard sauce and topped with golden puff pastry. This creamy sausage and mustard pie is a lovely, warming, winter comfort food dinner.
It's all cooked in one pan, and the addition of the carrots and potatoes means it can be a complete meal, without having to cook extra side dishes!

Ingredients:
1 tbsp oil
6 large pork sausages chopped into bitesize chunks (about 400g/14oz)
1 onion peeled and chopped
2 carrots peeled and chopped
¼ tsp salt
½ tsp black pepper
3 cloves garlic peeled and minced
1 tbsp plain (all-purpose) flour
600 ml (2.5 cups) chicken stock
1 heaped tbsp wholegrain mustard
2 medium potatoes peeled and chopped into bitesize pieces (about 400g/14oz altogether)* see note 1
80 ml (¼ cup + 1 tbsp) double (heavy) cream
2 x 320g/11oz rolls of ready-rolled puff pastry
1 small egg lightly whisked
Instructions:
1. Heat the oil in a wide, shallow, oven-proof casserole dish *see note 2, over a medium-high heat.
2. Add the chopped sausage and fry for about 5 minutes, stirring regularly, until the sausage is lightly browned (it doesn’t have to be cooked through at this point). Remove from the pan and place on a plate.
3. Add the onion and carrots to the pan and fry for 5 minutes, stirring often, until the onion starts to soften.
4. Add in the salt, pepper and garlic and stir together.
5. Add the flour, then stir to coat the vegetables.
6. Pour in the chicken stock and add the wholegrain mustard.
7. Add the potatoes and stir together, then bring to the boil and simmer for 10 minutes, until the potatoes are just starting to soften at the edges.
8. Whilst the pie filling is simmering, pre-heat the oven to 200c/400f (fan). After 10 minutes simmering, add the cooked sausages and stir in the cream. Then turn off the heat.
9. Carefully top the casserole dish with the puff pastry. I use two rolls of puff pastry that I squash together. This leaves a bit of a seam down the centre of the pie, but I think that’s fine, since it’s quite a rustic pie.
10. Cut off any really large bits of overhanging pastry, then roll the rest of the overhanging pastry up and back into the pan, to make a rough crust. If you like, you can make a bit of a pastry decoration out of the pastry offcuts (I make a few simple leaves) and place on top of the pie.
Pierce the pastry a few times with a sharp knife, to allow steam to escape.
11. Brush the top of the pie all over with the whisked egg (you won’t need all of it).
12. Place the pie in the oven and cook for 20 minutes, until the pastry is golden.
13. Remove from the oven and serve.
Notes
*note 1 - Potatoes
I use floury potatoes (such as Maris Pipers, King Edwards or Rooster), but you can use waxy potatoes if you prefer a firmer texture.
*note 2 - Type of pan
If you don’t have a wide, shallow, oven-proof casserole pan, you can make the filling in a large frying pan, then transfer to an oven-proof pie dish, before topping with the pastry and baking.
Ingredient swaps
a. Change the pork sausage for your favourite type of sausage
b. Top with shortcrust pastry, instead of puff pastry if you prefer (same cooking instructions)
c. Add extra vegetables - peas and sweetcorn work well
d. Swap the potatoes for sweet potatoes

I'm perfectly OK with this being called a pie. There are many people here in the US that only put a top crust on chicken pot pie as well.

It's a pastry topped casserole. Also known as a lie not a pie! It looks nice but the sauce could do with being a little thicker for me and I don't like whole grain mustard so I'd leave that out.

I’m in the southern US and we wouldn’t consider anything without a bottom crust a pie, but that’s a regional “thing”. We are going to try this recipe with what we call country sausage because it looks delicious.

It looks delicious. Whenever I have sausage and a biscuit together I add mustard to break up the fattiness of the sausage. This looks so good. And you can have a pie with a bottom crust without a top crust so I don’t see why you can’t have a pie with the top crust and no bottom crust.

Love that you don't need to use expensive ingredients to make the most delicious of dishes and that they are so easy to prepare, even for students or young people starting out in life, or people who find themselves alone in older age. hi, I love your videos and have made several of your recipes to the great delight of my family; so thank you very much! It is because I like your cooking so much that I feel compelled to tell you that when I made this recipe, I ended up with a waterpark rather than a pie/casseroll. I am about to go swimming in it right now, and I am very sad. I believe the chicken stock volume should be reduced to 2.5 milliliters rather than cups 😞. I am not sure why it turned out this way; I truly followed the recipe to the letter.

Like you I'd call it a caserole with a pastry lid so no one is disappointed lol. I would also stir in some chopped fresh herbs like parsley before putting on pastry, that's just my preference. Thanks for all your delicious recipes 😊

just had this for our dinner tonight.....tasty, filling and plenty left for seconds....easy to make as well....next time i may swop out sausages for chicken, put a splash of white wine and some mushrooms as well.....definately cooking this one again...thanks

A pie is topped with pastry, pastry lattice or potato, and it could have pastry underneath. A flan is not topped but can have pastry or veg underneath. A casserole is a thickened stew cooked in the oven and dough balls if wanted. A stew cooked saucepan or oven crooked and not known for thickening unless by adding potatoes. I’m sure others will vary.😊 And a soup is yummy too!

I would serve it two ways. As you have delicious with some green beans cauli or broccoli. Or omit the potatoes add some celery with the carrots and serve with mashed potatoes and fresh veg.

I agree with you it's not a pie without a bottom crust. When we make apple crisp with oatmeal struesel on top we don't call it a pie either or when we make a cobbler or crumble.

Good afternoon Nicki, I would refer to this style "pie" my family would also refer to pie! This looks so delicious, and you know what, no sticky bottom ever with a top crust. Some complain if it's a double crust too much pastry, no satisfying some!! All that matters to us, it's delicious, fresh and hot and no uncooked pastry. Just make, bake and enjoy. Thanks for sharing. Dont know if it's typical to my NE UK area, but we've always called a dish like this "pie crust" regardless of the filling underneath the pastry lid 🙂 I love this version with the sausages, never done that, added to my Saved Recipes, thank you 😃

Grew up on 'Plate Pie' in Lancashire - Sweet or savoury the difference being that it was baked on a plate with a pastry top but without any pastry base ! It's a Pie !!!!! Reyt !!!! Ah lad - 'tis ! 🙃

Dictionary says that a pie is "a baked dish of fruit, or meat and vegetables, typically with a top and base of pastry". So this is a sausage and vegetable casserole with a pastry top. Heck, who cares - bet it tastes great.

Love this! I’ve made this a few times now! I did have to boil the potatoes for a bit before putting in the mixture as the first time I did it the potatoes didn’t quite cook Also I changed It a bit for myself as I’m vegetarian and I used quorn sausages and vegetable broth! Soo good yum!

A modern pie. 😂 not too much pastry and easy to make. My homemade chicken pies, at least two vegs included, are made the same (puff pastry on top) and it’s great. No soggy bottom 😁. Your recipe as usual is great, flavour and vegs too as in healthy and it’s inexpensive. A Recipe great for flavour and our times. Thank you and well done 👏👏

.I would call it a pie. I think anything that has a pastry topping is a pie (much better than a soggy bottom). But I have a question about the sausages. We don't have the same plain pork sausages here in Canada that you have in England. I'm assuming we could substitute any kind of sausage. I'm thinking it might be better to poach the sausages a little first and then peel off the skin, before slicing them into rounds. The skin doesn't look very appetizing after the pie is cooked.

That recipe is really adaptable to making it purely vegetarian, ie. just substitute mushrooms for sausage ect.

I'm from near Burnley so we wouldn't call it a pie as such but it looks lovely Nikki. Plenty of moisture to go with veg and mash or chips. Horses for courses with a pastry topper so depending how you feel possibly the best of both options. The pastry in the bottom of a full pie can sometimes be a pain to get cooked through can't it. Thanks.

A pie should have a top and base. At our local pub they serve what they call a Pot Pie. Small caserole dish with a crusty pastry topping. Deelish. So yes it is a pie. A pot pie.

Id call it a pie..that no pastry base is jusr circumstantial. My chucken pies never have a oastry base. Austerity food..maybe!?. However just hearty simple stuff. Puff pastry not needed..suet crust would work or just shortcrust pastry. Meat and pitato pie worth looking at..using bay leaf flavouring... Really good peasant food.

As a Southerner (USA), I would not call this a pie without a bottom crust. All true pies, in my opinion have a bottom crust, although not necessarily a top crust. So, my friends across the pond, does the jam go on top of the clotted cream, or does the clotted cream go on top of the jam? 😉🙂

Will try this! I think it's a pie...if it's got a pastry lid it's a pie to me. I grew up on potato pie (I am from Lancashire) and that's mince, onions, potatoes, carrots and a crust (served with pickles) and that pie was the only reason I grew. So yes, this is a pie 😊

Maybe I missed something but I didn't catch your saying that you skinned the sausages.

Yes. It's a pie. It's similar to the chicken pie made by my great aunt.

For me it's a Casserole as a pie has a Top & Bottom . Will definitely give it a go though but in a pie

Eggwash can be repkaced with milk wash.
