Fun fact - my great grandpa was on the team that developed the Marionberry! He and my great grandma had several marionberry plants from cuts of the original one! They cut starts off of theirs and have given them to each of their kids and grandkids. When I have my own house and garden someday, my mom will give me a stsrt from her plant. ❤

​@@DeAnn_Davies_1227well I've never heard of them before! But my favorite berry is what we call Wine berries. And I've yet to meet anyone outside of my town in WV that's even heard of them. So I found out they are from China! And they were brought to my area of the Appalachian Mtns to try to start them here!

Pumpkin Chili. So easy and yummy. You don’t really taste the pumpkin but it makes the chili creamy. • 1.5 lbs ground turkey 1 large or 2 medium onion, chopped • 6 garlic cloves, minced • 1 cup pumpkin puree, from the can or homemade • 1 cup fire roasted crushed tomatoes, from the can • 1-2 cans stock (chicken, veggie, beef) add more if needed to get consistency desired • 15 oz black beans, from the can, drained • 1 ½ teaspoon cumin powder • 3 tablespoon chili powder more to taste • salt, ⅛ teaspoon thyme or a bit less ⅛ teaspoon basil or a bit less ½ teaspoon crushed red pepper Garnish • 1/2 cup cheddar cheese, shredded • 1/2 cup mozzarella cheese, shredded • 4 green onions, chopped • 1/4 cup sour cream, optional

Becky, cut yourself some squares of “waffle” shelf liner about 12” x 12”. You know, the rubbery stuff. Use them under bowls, cutting boards, etc. These items won’t slip at all. I’ve been using the same two pieces for six years and they still work great. They’re also good to use for getting lids off of jars. 🌺

After watching your channel, I decided to double my dinners and put one in the freezer. It was an absolute blessing during the holidays as schedules got busier. I was able to serve my family home-cooked meals even on the craziest days..and it relieved my stress! I’m now moving on to try my hand at water bath canning. And we’re buying an extra freezer. Thanks for the inspiration, Becky!

Becky, just a hint to help fill those gallon baggies…I take my blender container and put the bags in there. It really helps in not making a big mess and you don’t dirty up any more dishes either. I also put pumpkin purée into homemade dog biscuits. My recipe is 3 cups ground up whole oats, 1 cup smooth peanut butter, 1/2 cup pumpkin or apple sauce and one egg. Bake for 2 hours in a 250º oven. My grand doggie loves them.

Warning too anyone reading who loves dogs but might not know this: it's important to make sure the peanut butter you use for dogs is all natural with no artificial sweeteners added. Xylitol is deadly highly toxic to dogs.

​@butterbean1965 just use her recipe but not fully cook to 2 hours. Make sure the peanut butter is natural...Peanuts and salt only ingredients. If you shorten the time in the oven from 2 hours to 1.5 hours they should be softer. Just check them.

Becky, when I was your age....(I'm 65 now), I used a book called once a month cooking and batch cooked for my family of 5, they did not like any of the recipes! I wish I had your youtube channel back in the day. I've cooked some of your recipes and my family has devoured it! Thank you for all the hard work and preparation you put into these videos. You are so entertaining🤩

@user-bu1gn1ze2w I had that same book! It inspired to me to branch out and try making freezer meals from my favorite recipes, whether or not they were in that cookbook. At the time, I worked overtime a lot, and had fatigue issues and food allergies. So I modified the approach and packaged my meals into single-serve pyrex bowls with lids. It was a game changer for me.

When you freeze dry things that are viscous like pumpkin puree or mashed potatoes, it really helps the extraction process to make ditches through the trays. I just use my spatula and make lines, kinda like cutting it into bars. It increases the surface area of your product allowing exit routes for moisture to escape.

Here in Aus we only really use pumpkin in savoury dishes... pumpkin in a vegetarian lasagne is lovely, although i usually use thinly sliced pumpkin that is grilled to partly cook it first... but mashed/pureed pumpkin goes well in a gnocchi (as in, in the gnocchi balls themselves) and of course, pumpkin scones (you guys would call them biscuits!)... just add your pureed pumpkin into a biscuit dough... or in a bread dough... 😀

pumpkin in yeast down like foccacia or pizza with pumpkin instead of tomato sauce with feta, toasted nuts and Pesto or Gouda, sage, kale and bacon maybe even with interchanging blobs of pumpkin puree and sour cream like "Flammkuchen"

In the U.S., scones are different than biscuits, but for people that don't know what american biscuits are, the closest thing is scones, even though scones aren't quite the same.

Becky, I used your baked oatmeal recipe to create mine. 2 c Oats 4 eggs 1 c milk 1/2 tsp salt 1/2 c honey 1 tsp vanilla 3 T melted butter half a pint of homemade whole cranberry sauce bake in a 9X9 at 375 for 40-50 minutes I usually double it and bake in a 9X13. This freezes great.

This doesn’t have to do with this video but just wanted to thank you for sharing so many good recipes. For Christmas I made several of your recipes: bacon wrapped chicken with cream cheese filling, Parmesan carrots, mashed potatoes,and cheesecake stuffed chocolate cake. I also added a few of my own appetizers for the kids (we had Little Smokies in a blanket, grape jelly meatballs, snowman cheese ball, deviled eggs, Christmas tree pesto bread sticks, apples and Carmel dip) but the concept was yours. Main dish and appetizer sides. Oh and eggnog cookies (delicious) and Andes cookies which did not turn out and I did everything according to the recipe. I think it’s just a bad recipe. Thank you for helping me have great success this holiday season. Oh and I also used your and your mom’s entertaining course to help keep me organized. You’re a treasure Becky. Thank you!!

For us in Switzerland as well ! I remember being a bit puzzled by all the sweet applications of pumpkin in the US, let alone the famous latte haha Turns out it is also delicious :) My favourite savoury reciepe must be butternut soup, so creamy with a spoon of crème fraîche and a dash of curry powder, yum! Or maybe roasted spagetti squash halves topped with a béchamel sauce and cheese

Here’s a hint for your dishwasher. I have silicone lids that I use for bowls and pots and pans. When washing light weight plastic containers in the dishwasher I take one of my lids to cover them so they don’t turn over during the was. I was told that if all the water doesn’t recycle through you can burn out the heating element. This happened to us and it cost more to repair so we just replaced our washer. Using that lid has been a game changer. You can use a silicone mat as well. You are a very talented cook. I’m so in awe of all that you do and accomplish. Love watching you, thanks for sharing.

When it comes to the use for the pumpkin- a friendly reminder that it is good for sick tummies for dogs and chickens. We also like spicy Italian sausage and peppers with a cream based pumpkin sauce. We have also used a pumpkin and tomato sauce for a pizza base. Pureed pumpkin and cream cheese mix is great on a bagel. Pumpkin gnocchi

I freeze dry all my pumpkin. It's the easiest way to store and use it. I love making dry mixes of pie filling and muffins. Pumpkin stuffed ravioli is delicious with a sage brown butter sauce. I also make a coffee flavoring with pumpkin powder, pie spice, monk fruit, and collagen. It's delicious !

Years ago at Cafe Sol in Eureka Springs (sadly it's no longer there), the waitress talked me into trying the pumpkin ravioli. SO. GOOD. A religious experience. I'm sure the sage brown butter sauce helped... and I bet they freeze wonderfully.

A few suggestions for savory pumpkin recipes: pumpkin risotto, pumpkin lasagne as you said, pumpkin and chestnut soup, pumpkin mashed potatoes (which you can then turn into mashed potato cakes, or use to top shepherd's pies and such). Pumpkin goes well with savory cheese, sage and nuts, bitter greens such as radicchio, oozy creamy sauces, mushrooms... You could also use it as pizza topping, in place of your classic tomato sauce: add mozzarella, sausage and top with fried sage and toasted walnuts! We love pumpkin in our house

When vacuum sealing puréed or very moist foods,I always pre-freeze them and make sure they’re frozen when I vacuum. I freeze them right in the vacuum bags and take them out in small bunches to vacuum seal 😊

I LOVE pumpkin soup! Flavor to taste with Chicken broth, Garam Masala, Garlic, a little onion, butter, hot pepper flakes, nutmeg and something green flavored like basil or cilantro, fresh spinach, or whatever you have or like, and when near done, add cream. When gardening, we used squash, but now widowed and alone, I like the convenience of small cans of pumpkin and was surprised I like it even better. Ground turkey, pumpkin, and white bean chili is delicious. The recipe I follow contains all the usual ingredients as well (green peppers, carrot, onions, garlic, diced tomatoes, and spices - plus the splash of fresh lime juice at the end). Thanks for sharing all your recipes and food prep! 🙂

I just found a recipe for squash (pumpkin) cinnamon rolls. It’s not savory but it’s additional nutrition without being a “pumpkin pie flavor”. You could probably add it to many bread recipes.

I recently saw a video by Claire Saffitz where she made savory sweet potato dinner rolls, and I bet you could substitute pumpkin for the sweet potato! They looked delicious, I've been meaning to try them.

Good morning Becky, well, I just had to tell you how Our Christmas was this year! I decided to bake like crazy like you do. I tried many new recipes and now have a few new favorites. However, I have no idea how you get so much done in just a day. If I was lucky, I could get 2-3 recipes done in a day. I made Chai Spiced Scones and baked them in my Nordic Ware Scone Pans. I have two for winter and a square one for Spring and Summer. I also have several others like large Gingerbread men and women. I made chocolate chip scones to give to my neighbor and to family. I also made Pecan Shortbread cookies and made them into cutout cookies. I tried to decorate them with Royal Icing. I used to decorate cakes but especially the cookies. My hands aren’t as good as they once was but it was still fun. However, here it is, 12/28, I still have cookies to decorate! I hope your family had a wonderful Christmas Season. God Bless you all. I have a "sneaking veggies into your kids diet" cookbook which i used a lot when my kids were little. Our very favorite family recipe from it was pumpkin chicken fingers. I know it sounds totally bizzare, but if you dredge chicken breast tenders (really coat them generously) with pumpkin puree before you bread and fry or bake them, they are amazing! Its the only way i will eat chicken fingers to this day. They also keep really well as leftovers and make good freezer meals or microwavable after scool snacks. Highly recommend!

I absolutely love Marionberries.. My husband first introduced them to me from a town. I believe it was a town called Azalea, Oregon. A restaurant named Heaven on earth. They made Marionberry jelly. So yummy

Hi Becky!! Just a thought for using your pumpkin but what about pumpkin waffles for chicken & waffles? I bet that would be amazing. I’ve never had it but would definitely try it. 😊 also when you use parchment paper to make it fit in your pan, if you crumble it 2 times then undo it, when you put it in your pan it fits to the corners and sides much easier. ❤

The colour on that pumpkin is amazing! I have been growing our own lemongrass for the last 10 years or so and have gifted some to family members to grow too. I started with just 2 stalks left over from the grocery store that I put in water. I bring them inside every fall along with my rosemary plant.

I make my own dog food and pumpkin is always in it :) also you can bake directly in the smaller snapware so you don’t have to portion it later. I do it all the time just make sure to spray them well and put them on a cookie sheet

It’s chicken, veggies and brown rice mostly. I have tried different things to find a mix of things he likes and that didn’t make him itchy which is why I started making it in the first place :)

Becky, I freeze dry my pumpkin and I love it! I can reconstitute it or just add the powder to recipes. It works great and doesn't take freezer space.

Molly Katz in her moosewood cookbook has an excellent recipe for pumpkin/butternut squash curried soup with mushrooms. I've even canned it as gifts for family. I love that pumpkin and butternut squash are interchangeable in so many recipes. You are a powerhouse and I admire all you do. Happy New Year Becky.

She also has a nice Greek Pizza recipe that uses phyllo dough - it’s not in this cookbook, but you can find it online (you can find a lot of her recipes online). It’s a fun cookbook - all the recipes are hand lettered and illustrated by her.

Whenever I’m ill I gravitate towards spicy. Hot & Sour is my go to but it’s take out. Never have tried to make it. Another favorite is Indian Butter Chicken. I’m not sure about Pumpkin Curry either but Im pretty sure if Becky made it…it’s going to be delicious!❤

Becky, as far as not having silcone mats for all of your freeze dryer trays. You can also use parchment paper. It is wonderful for fruits candies and purees. I use both silicone and parchment. I have been learning by trial and error and it is fun. I am glad to see you freeze drying your Pumpkin puree it is a fun item to add to any soup or meal just for thickening and nutrition.

I made my 1st from scratch using fresh pumpkin, pumpkin pie this year it was sooo good! Felt good not having to use a store bought can to make it. Your puppy's in the background 🐶🐶 are so cute!

Discovered an amazing pumpkin for baking. The popcorn pumpkin roast amazing and is very tasty. No liquid to drain off either. I had to add a cup of water to my pan while roasting. Everyone loved the pumpkin bread and pies I made. They are lighter in color but an amazing taste.

Thank you as usual for a great video! I would love to learn more about freeze dryer challenges and how you overcome them. I have had a freeze dryer for 2 years and it has continually given me trouble. For example, I can't even dream of putting whole strawberries or large chunks in. I basically slice everything thinner than I want to use them and they still need many extra hours beyond when the cycle ends. I find it very frustrating, but I watch so many youtubers make it seem so easy. I must be doing something wrong. I would love to hear if you've run up against challenges and what tricks you have to make it not so overwhelming. Thanks!!!!

Sorry to hear that you have been unwell,hope for a quick recovery! I love blue cheese and goat cheese and often use them as a "spice" when cooking. I often make pierogis with minced lamb and some blue cheese, delicious. Meatballs or a meatloaf with it is also nice and both cheeses taste good with pumpkin, so why not make a simple pumpkin sauce to serve with. Or as a filling in dumplings or a lasagna, I often sprinkle thoose cheeses on roasted pumpkin chunks and even my hubby likes thoose cheeses then! I also think rosemary and thyme (preferable lemony thyme) would taste great with it. Happy New Year from Sweden!

Ravioli di zucca always served with butter and sage sauce in milan we add a small amount of grilled cherry or grape tomatoes oven grilled with s+p olive oil xv and a splash of balsamic, low heat for aprox. 20 min. Super yummy ! Enjoy Becky and happy new year! Best Wishes Chef Sara

When it's pumpkin season in our side of the world (hello from South Africa), we have pumpkin fritters, I think Josh's family will be familiar with the concept of fritters, it's Dutch in origin. South Africa has Dutch and English links. Its soooh easy to just throw together and uses the same ingredients you use for pancakes, it's basically a pancake with less flour.

Hi there! Just watched for the first time today. I’m inspired by the content from younger homesteaders. We live in Northern Illinois and are retired, both retiring earlier than most. My birthday (64) is NYE and we were going to go out for lunch. However we are going to get snow during the day. Well, I’d like to have a couple adult beverages with lunch. To make things simpler we are going to lunch tomorrow and so I won’t have to cook in my birthday I’m following your lead with making meals ahead of time! By tomorrow our NYE dinner will only have to be popped in the oven for a thorough reheat! I look forward to watching more of your channel. Happy New Year!! 🎉🥳🥂

It’s always fun being in the kitchen with you. I hope you’re feeling better soon! The Trader Joe’s noodles are amazing and a little goes a long way with the sauce packet…they are so versatile. I love them cooked as is with some veggies and fresh ginger for a quick soup or like you did adding them to a more substantial dish. Yum! I make my own garlic butter using my puréed, garlic and real butter. It’s awesome for garlic bread and it’s not quite puréed. It’s more like minced it’s perfect. I love it and I appreciate that you gave me that idea by watching your show.

What a fun gift for your mom! I love practical gifts that will save the person time and money! I have been making goat milk soap for over a decade and at first it seems scary, but after a while it’s old hat and so much fun! Our family’s skin loves it so much better than store bought. Pumpkin can be used so many ways and yes I saw someone mentioned it is so good for your sweet pups as well. Enjoy ! So today I learned what a Marion Berry is. Seems they are predominantly grown only in the Northwest USA. Here in the Midwest we mostly have only blackberries. Perhaps we have Marion berries labeled as blackberries because that’s the verbiage we are used to. So now I’m on a mission to find Marions!

Marion berries and black berry grow like weeds in the pacific north west. My brother lives in Snoquamie and we have literally just walked down the roads and picked berries that were growing wild. We picked enough to make 5 cases of jam. That was the best time and so much fun. You just need to make sure you wear long sleeves and gloves. The thorns are so ouchy. Lol

Freeze-dried pumpkin works in so many dishes much like your freeze-dried tomatoes. I also use powdered pumpkin along with powdered milk and pumpkin pie spice to make my own coffee creamer. I understand that's not savory. I use powdered pumpkin when making biscuits. It makes pumpkin muffins super easy. Adding powdered pumpkin to a marinara is delicious. Using powdered pumpkin in soups and stews is also very good. I think powdered pumpkin is an incredibly versatile product.

I don't know of any savory pumpkin dishes, but I think it is wonderful added into a chocolate cake batter and other baked goods. It allows for less fat to be used and still have moist results.

You could totally grow your own marionberries! They were developed in the Pacific Northwest. They are aggressive and prolific. They do need pruning seasonally to attempt containing them, but worth it!

We can grow Marionberries in the south. They takeover a fence line with prickly canes and sweet juicy berries in no time. Just prune out the old canes like blackberries. I dig up sprouts to propagate them or just mow them back.

I grew 150 bulbs of garlic this year. I did a quart jar of garlic honey ferment. Also did a long slow cook of a couple cups of garlic and kept the oil off of it for cooking. The rest I put in the fridge for regular use. I did 10 hockey pucks. I still have about 50 to do. I discovered if I soaked the garlic cloves in water for about a half hour the skins come right off, after doing most of them the hard way LOL. Made the job a lot easier. I am only planting 75 for next year. I got my inspiration for these methods from you. Thanks so much. I learn so much from you. I am almost 70 and still find there is a lot to learn in gardening & in the kitchen.
