You can also roll your larger basil leaves into a “cigar”, wrap tightly in plastic wrap, and put in the freezer. When you want basil later, take out the cigar, unwrap one end, and cut thin slices (making a chiffonade) from the cigar. Rewrap the cigar and put it back in the freezer immediately. Use the chiffonade in sauces, on pizza, etc.

@@gerismakeuplaughs152 most of them. I freeze dill, parsley, chilantro and chives. Basil i personally use mostly in cooking same with oregano so thoose goes into the dryer. Moroccan mint into ice cubes if you live in the northern hemisphere makes sure you can drink fresh tasting mojito year around.

Your basil looks amazing! My wife's Italian grandmother put 1 basil leaf in every jar of tomatoes that she canned. They weren't really canned tomatoes without basil to her I guess. I always enjoy watching your teaching sessions. Even an old dog like me can learn how to make pesto! Thanks and bless you all!🙂

May I give your viewers a few tips? Boil water, add a table spoon of Baking Soda to the water. Blanch Basil leaves, plunch into ice cold water. This keeps your Pesto an amazing Natural bright green color. AND If you roll the ziplock bag out and down about 1 inch, when you spoon in Pesto there won't be residual on the zipper. I also use my hand on the outside of the bag to pull the Pesto off the spoon, like a glove. very little waist that way and NO mess. You will love this.

When basil starts to flower I always take some pieces and place them in a jar with water. In a few days to a week you’ll have roots form. I then lane them in a pot and start my plants over.

You can take basil, put it in a baggie, massage it with olive oil and freeze forever…..thawed it’s still fresh like the day it was picked for making pesto, basil chicken, etc.

I make my pesto very similar to how you do it, including the walnuts. The only difference I do is I use roasted garlic. It just takes it to the next level!

I wonder if fermented garlic would work too. To ferment garlic you just pack the cloves in a jar and add raw honey. Make sure you burp it regularly - once a day for about a week - and you'll see the bubbles - that's a good ferment. Ready in two or three weeks. Keeps longer. The better the jar, the better it keeps. Source: Living Web Farms or Goshen Farms (I can't remember which one! Both are good resources)

I keep half a freezer loaded with pesto, lemon, lime, left over buttermilk, coconut milk, tomato sauce, Chipotle, and homemade stock in cubes that I can pull out for many recipes. Lemon juice in my pesto....never turns brown.

I make a cilantro pesto also. Add a jalepeno, almonds and lime juice along with the parmesan cheese and olive oil. Its awesome as a spread or dip for tortillas. Great way to use up cilantro before it bolts.

I use the exact recipe but I freeze it in ice cube trays then when frozen, I pop them out and put the cubes in freezer bags. Have you ever added pesto to mayonnaise and spread it on Turkey sandwiches? So good with turkey.

Looks delicious! I freeze my sweet corn in quart bags. Make it easy by putting the quart bag in a 2 cup Pyrex measuring cup and fold the top edge out so I don't get food in the zipper.

Sarah, I highly recommend getting some bag stands to help with packaging foods when you're processing high volumes. They hold your bags standing upright with the top wide open, leaving both hands free. They're adjustable height, too, so you can use either quart or gallon size bags. And, when you're done, they collapse and fold to take up less storage space. I have six of them and I'd like to have 12, they're super handy. I got them from Amazon, the green ones called Ruibo Ziploc Bag Holder Stand Adjustable... I dont know if I can leave a link here or not. I'll try in a separate comment.

My wife always folds the top back and it seems to hold it open, plus it keeps any mess off the seal of the bag. But a stand sounds great. Maybe a xmas gift this year!

Love your channel, a couple of suggestions for you guys would be to use fresh parmesan and grate it yourself. Two reasons, first is pre grated has anti caking agent and doesn't create as creamy texture and second is you can use the rind in risotto, soups and stews etc for extra umami flavour. Also try using the stalks and stems steeped in olive oil, or dehydrated to make delicious powder to add to dishes...

I agree that you should use fresh parmesan, not the stuff in a bag that's pre- grated. Also I think that their basil was reaching the end of its life it looked rather dry and not lush and green, it looked like it had too much sun. And the stems look very woody. Most basil prefer shade.

@@sharonshepard4580 I watched a few videos and people keep saying basil needs alit of sun. My apartment used to be hit with a lot of sun the first three years I moved here but now, the sun is much weaker. The basil I've been growing is doing quite well. So is the parsley. The cilantro is struggling.

@@terracotta6294 I grow all of my basil in full shade, it loves the heat and it loves the shade. If I grow it in the sun the leaves become light green and the plant becomes very woody.

Oh and another great way to preserve basil is to put believes in plastic bags with olive oil and burp all the air out. It'll stay for a year or so. Great to have handy for caprese salads

I like to take my basil and chop it up and mix it with soft butter. Then I freeze it in logs. It's great and scrambled eggs and melted over pasta. I've been watching your show for a long time and it's the first thing I look for on Wednesdays and Saturdays.

I love making herb mixes for cooking, in my last garden I grew 10 varieties of basil and did 5 different blends after I dried them. Some of the best dishes ever.

My mother taught me to freeze pesto and other herbs in ice cube trays. Measure the first one to see how many tbs. your tray cube makes. Then transfer them to plastic bags once they're frozen. Voila, you have premeasured amounts to use for making soups, omelettes, spaghetti sauce etc. We also did that with our over abundance of eggs for baking. Very convenient.

@@gerismakeuplaughs152 Hi Geri, Mom would break the eggs into ice cube trays then she'd use a skewer or something sharp to break the sack around the yolk so it wouldn't explode when freezing then just pop the ice cube tray into the freezer. The eggs were great for baking, scrambled, omelets etc. Get some ice cube trays with the largest cube areas so if you have large eggs they won't spill over.

The last few years I have started making pestu instead of pesto. Just basil, salt and and olive oil. It gives me more flexibility later; turn into pesto or use otherwise.

Yes! dairy free Pestu is good too. I first discovered it at Fresh Thyme. They sell a kale and carrot pestu. Although it is still labeled Pesto. I use pumpkin pepitas instead of nuts for a allergen free version.

Those herb pullers, where you put the herb stem through a small hole and pull to remove the leaves, are absolutely perfect for basil. I find they are a pain with a lot of other herbs but basil they are great. Thanks for another lovely recipe, we still make your country bread and bagels regularly.

So glad that yawl are getting a good harvest. We are hot and dry here in central Texas and it's been over 100 and no rain for over 30 days. We were able to harvest some things however lost a lot. We have been gardening here in Texas for 30 years and this is the worst. We have several video's on our channel showing how we manage the hot weather. Love your channel and always goo to see yawl. Thank you for this recipe, I hope to grow more basil next year. I use quart size freezer bags a lot, luckily I found I had a container that I could put them in and pull the edges over the top so I didn't get food on the zipper part.

I just put a huge amount of basil into the dehydrator this morning. There’s so much more in the garden still and it’s my favorite aroma out there. I use those playtex gloves to peel my garlic. Works really well. Thanks for the video!

I use my wooden pastry/pizza roller to flatten and roll the air out of freezer bagging flat items. Easy to hold and fast results. I'll save my wrists the strain when doing ground beef. I also put a cut piece of a drinking straw between the zipper on the bag. It let's air release while I roll out the bubbles & quick to pull out and finish the zipper seal. Kevin, the roller works great for pizza, too. It maneuvers the dough so easy. Save your fingers and wrists for old age. Love ALL your videos. Pigs please. I'm so happy for you to be getting such a wonderful harvest of basil ❤️ That will be fantastic this winter. I'm not going to lie, though. I feel jipped that we didn't get to see how much you got from the harvest of green beans or zucchini. Can you please let us know how much you got out of the green house garden from them. It was kind of like watching a movie all the way to almost the end but not getting to see the end. We were there with you all the way through and didn't get to see the results. Fun fact about basil...those thicker stems will root and you'll get more plants! Even works with basil from the supermarket, if you're lucky enough to get the thicker stems

I love me some homemade pesto...I used to make it every year. This year & last year I haven't really been able to do any canning due to two major shoulder surgeries. But I sure do love watching you harvest & make your pesto. Thanks for sharing & God bless you both & your family

Wow - have you heard of Orgain organic powder? It's made with plants. A great boost for you to drink daily. Even Ovaltine would be good. This should help your shoulders heal.

We love homemade basil...fresh or fozen. For cost reasons, I tried using shelled sunflower seeds and we really like that just as well as nuts in the pesto. If using freezer containers, pouring just enough olive oil to cover the top of your pesto before freezing it, will keep it green. 😊 Team pesto for sure!

Last week I experemented with quail in a pesto marinade. 5 skinless quail and 1 cup of pesto in a quart freezer bag (ended up adding 1/4 cup olive oil to increase coverage). The plan was to leave it over night, but didn't get to it and left it in a second day. Removed the quail and browned in a frying pan. Added the remaining pesto and heated it to a simmer. Served over pasta. OMG...my new favorite way to prepare quail. Now that I know how to make pesto, I will be making quail this was regularly. Thanks for the recipe.

Hey Sarah, been a subscriber for awhile. Love you guys. I am a recently retired guy and my wife has a wonderful job she still loves and still works. We have doubled our raised gardens each year for the last 3 years and this year I planted multiple plants of 7 types of basil. Primarily for teas and pollinators and companion planting for my tomatoes. Well…as you described, they love the heat in texas. They and our okra are about all that is thriving now in this Drought and heat wave of 103-106 degree temps we are experiencing. 3-4,’ Tall and prolific! Thank you for the detailed “ How to”. My gift is not is the kitchen! My awesome wife and soul mate is amazing, but after watching your food prep videos? I feel like I can assist in the processes while she still continues to work! I freeze my pesto in ice cube trays and when frozen place in ziplock bags, easy to grab out as many cubes as you need for a recipe.

Hi Sarah. Your pesto looks great. The way you package it is just like I package my green chile for the freezer. A 35 - 40 lb size bag of whole long green chile is roasted & cooled, then I chop it in food processor & pkg the approximately 48 cups in 1 Cup quart freezer bags, flattened like you do your pesto. It is a space saver for the freezer, and perfect to thaw for one's recipes. I'm fairly new to your channel & really admire your hard work ethic, as well as sharing so much information to help us be better educated gardners. Keep up the good work! (I'm from the great state of New Mexico, known for many things, but especially Hatch Green Chile, Green Chile Capital of the country.) Blessings.

We freeze it into ice cube trays then put the frozen cubes in one box in the freezer. This uses less plastic and means you can defrost exactly what you need at a time

You inspired me to harvest my basil and make pesto for the first time. Used your recipe but substituted almonds. Yum! And then made creamy pesto pasta! I think I need to plant more Basil, I am now addicted! Love your channel!

Use a strainer next time! Stick the bottom end of the basil (opposite way the leaves grow) and run it through the strainer. You’ll have the leaves in the strainer bowl, and the stem in your hands. Your welcome.

I am not good at growing things, but basil is one thing I can grow. It is very easy. Parsley is easy too. I have tomatoes that are growing well too. I bought some fish emulsion and it works. We've harvested some nice tomatoes.

We just did this a week ago! So delicious, we've made pesto for the last 4 years this way. Freeze them the exact same way too. But we haven't used walnuts before, we usually just use pine nuts or no nut. We'll have to try walnuts. I was hoping that you would have a faster way to get the leaves off of the stem but alas picking each leaf individually off the stem is what we do, by far the worst part of the process. We've found that store pesto isn't that much more expensive than making your own because the pine nuts and parmesan are expensive, but it sure is superior like you say! Thanks for sharing, we look up to your expertise and have adopted many of your practices so it's so encouraging to see that we're doing the same methods from our own practices as well!

Greetings. Thank you for showing how you make pesto. I use more olive oil and I place the mixture in ice cube trays. After freezing remove from tray and place in freezer bags. When ready remove 1 to 2 cubes and place on pasta for 3 serverings. It will automatically melts on hot pasta like angle hair, linguini, or spaghetti.

A suggestion for speedier harvesting of leaves: Take one strip of food safe metal such as stainless steel. ...Bend this at an angle. Take out an assortment of drill bits and arrange them according to size. Make holes in the metal strip at or near the folded angle. That`s it except to run the branch of the herb through the metal and collect the leaves. Hope this works for you. I enjoy watching your videos.

Some people use their colander to strip the stems...and there are very inexpensive herb pullers/ strippers

I make just basil in oil and put in freezer cube trays. This works wonders to be able to add into anything. Also a tip I learned is to add a little fruit fresh or citric acid to your pesto and this really helps prevent any browning. Lemon juice also helps with the brightness too. love your videos. Thanks for sharing all you guys do. I have learned a lot.

I have made a couple big batches of pesto and honestly I like the walnuts better. I also add the juice of one lemon to the 8 cups of leaves. I use the holes in my colander to strip off the leaves.

I don't have much basil right now because I got it in late, but I did get 3 freezer bags with 1/2+cup of pesto in each with a bit extra for tonight. Now let the basil grow! Next...pickled peppers! I have a suggestion, to reduce plastic freezer bags you might freeze it in ice cube trays or silicon trays also silicon freezer bags they are reusable.

I freeze a wide variety of fruits and vegetables this way but after I have filled the bags I lay them flat like you do and I lay all those flat bags on a very big tray so they ley flat in the freezer first and then I stack them on the shelf. If I have too many bags to have a single layer I lay a large tea towel over each layer to keep them separate. This way they all lie flat and do not get the lines from the freezer shelf. It make take a little longer to freeze fully but so worth it.

Perfect timing of this video. I have planted basil in a paint bucket on my deck (first time for growing this plant), and it's looking lush and full. And I was just going to pick the outer leaves. Didn't know that I could cut back branches of it, and that it will grow back full again. Thanks for sharing how to harvest and manage this plant! (I also picked up a small pot of "Thai Basil" at Walmart or Lowe's, can't remember which store. But I have it growing in a planter, and researched it after I bought it. And it's a great powerhouse/super food... with many health benefits. And I can bring it indoors for the winter months, as a houseplant that we can harvest from). It's a smaller plant then regular basil (so far at least). The leaves are smaller too. But it's health benefits are: "High in antioxidants, anti-cancer, anti-viral, anti-bacterial, and anti-fungal properties which is why it has been used in traditional healing since centuries ago. Aside from ingesting Thai Basil, you can also use the leaves and inhale it's aroma to relieve stress." I've never made pesto before, but now I'm going to try it. Looks really good, thanks for sharing your method of making it! 👍😊😋

I freeze pesto in ice cube trays. Pop them out after being frozen and put them in a Ziploc freezer bag. That way you can use just what you want and it thaws quickly.

I grow a lot of garlic and like to freeze dry it. I struggled with peeling them and used the little gadget you show here. However, when you are peeling 30 or 40 bulbs it is too time consuming. I finally found to pour hot (not boiling) water over the cloves and let it sit for 10 minutes. They peel beautifully! Thanks for sharing this recipe. I'm going to have to try it.

I love pesto, great video. I freeze without the cheese because it takes some space in the freezer and I've heard it's better if you don't freeze it. I also like that it's quicker to defrost without the cheese.

I love the advice on flat freezer on products like Pesto... I thought of several other items that I will use this technique for... Great idea for FAST thawing! ... So jealous of your garden.. I miss having a big garden ... unfortunately I didn't have anyone to help with the DEER Fence in time for this year.... our rainy season here in Oregon lasted through the END of June making workers difficult if not impossible to find!~ Hopefully Next year will be better.

I freeze my pesto in ice cube trays. Once frozen I add them to a large freezer bag and just grab the amount that I need.
