Because it's based on an old meme that came about because people were simpletons, who saw pala as kinda gay and warrior for real men obv, and because palas can't tank. Vanilla was a very weird time, where people had many weird ideas, paladin can dps it just requires actually knowing the class and nolifing the shit out of it, but really not that much more if you wanna one shot people with any other class. Also you'll notice most of the one shots are on clothies, clothies were always one shot, mostly by hunters aimed shot or rogues ambush crit though.
