What in the world have I been trying to get Warren to do for over 10 years? We reveal that and more in today's video. If you're only here for the recipes then you'll love today's video because I'm sharing two brand new videos. Both new recipes are from a cookbook compiled and published by Carolyn, a subscriber.
Baked Spaghetti (I've adapted it a little bit)
1 c. onion, chopped
1 c. green pepper, diced
1 T. butter
28 oz. can diced tomatoes, undrained
2 t. dried oregano
1 lb. ground beef, browned and drained (I used 2 pounds)
12 oz. spaghetti, cooked
2 c. shredded Cheddar cheese
1 can cream of mushroom soup
1/4 c. water
1/4 c. Parmesan cheese
Sauté vegetables. Add meat and brown, drain if necessary. Add in tomatoes and oregano. You may add in mushrooms and black olives at this point if you like those things. Simmer for 10 minutes. Grease 9x13 baking dish. Place 1/2 noodles in baking dish. Top with half meat mixture and then all the cheese. Do one more layer of noodles and meat. Mix soup and water. Pour and spread over top. Spread to the edges. Sprinkle liberally with Parmesan cheese and bake uncovered 30-35 minutes until heated through and bubbly around edges. This is a great baked spaghetti for those that don't like real saucy spaghetti. I loved this a lot!!
Chicken Crack Soup
8 c. chicken stock or broth
2 ribs celery, sliced small
2 carrots, chopped small
1 med. onion, chopped
8 oz. egg noodles
1 can cheese soup
1 c. milk
6 pieces bacon, fried crisp and crumbled
3 c. cooked chicken, chopped bite size
1 oz. packet Ranch dressing mix
1 c. shredded cheese
green onions, optional
Boil gently vegetables in chicken stock. Add noodles towards the end when the veggies are just about cooked. Add cheese soup and milk. Stir until combined. Add in chicken and ranch packet. I saved the shredded cheese to add to the top of the soup with some green onions. Simmer until soup is heated through. This was very good. A bit salty so if you use chicken bouillon to make chicken broth go easy on the bouillon so it's not too salty.
