It’s NOT at all hard to achieve this if your very well organised. I’ve got 4 boys and I pretty much do the same as it just makes life a lot easier and you get more time with the family this way which is a bonus.

Peel and freeze the potatoes. When going to cook use them when frozen they will come out as if they were fresh.

You are very organised 👍 pliz separate the cooked foods completely from uncooked meat products like sausages , minced meats etc. Incase of leakages from the meats this can contaminate your ready food.

@Elizabeth - This would only be an issue when everything is at room temperature. Cross-contamination cannot happen when the items (cooked or not) are frozen. So the way she's stored them is fine.
