All veg and fruit ‘waste’ in my kitchen goes into the compost. I always have good, healthy fertilizer from the compost to put back into the veggies and fruit growing areas. Zero waste as well. And far more palatable than actually trying to eat avocado skins….😊. Excellent that an urban kitchen can find ways to do zero waste. It is a bit harder to be zero waste in a city.

Exactly except my peel is either going in the compost bin or given to my pigs as a treat. I also feed them my bananas when they get too ripe on the counter top because I do not like overripe bananas. They become too sweet for my liking. I have banana plants in my yard, bur they didn't flower last year. The frost and a tornado caused a lot of damage this year so while I'm hopeful, the outlook for them flowering this year is not great.

I would have never imagined eating orange peel until I found dried orange slices at Trader Joe's. Think the way you'd slice a tomato, and they leave the peel on. Genuinely really good if you're fine with a bit of bitterness in the peel.

If I am ever lucky enough to be able to do that, London is only a few hours away, and it would be a magnificent cherry on top to dine at Fallow. Although you can re-use oil, or use the oil you were going to use anyway for your other things. A lot of seed oils are ethically processed, and a lot of more South American kitchens will have large amounts of oil going anyway, and then use that oil again in something else, and then eventually the last remainders you can find a way to make compost or something else.

I mean sure, if their oil is re-used for other things and stuff. I’d say the more contradictory thing is the 2 hour roasting and the amount of water and such they probably use for all the cleaning. All stuff they don’t happen to show. Regardless zero waste can be achieved so much easier by eating the banana and then just putting the peel into compost.

Why is the oil inherently wasteful? Is it more wasteful than a fast food restaurant that would use oil for fries? Is it more wasteful than another banana desert that just threw the peels away? It's all relative. People saying hurrr eat the banana are missing the point. It's not a banana It's a banana based desert. If you're so not wasteful then eat the whole damn banana like Kevin spacey and compost it in your stomach.
