Crispy fried eggplant made with rice paper without starch!!
It's the perfect combination with the sweet soy sauce.

🍆 Ingredients for fried eggplant
- 2 eggplants
- 16 sheets of rice paper
- 50g green onion
- 20g minced garlic
- 1.5 spoons of brewed soy sauce
- 1 spoon of sugar
- 2 spoons of grain syrup
- 1 spoon of vinegar
- Extra virgin avocado oil
- Sesame seeds (can be omitted)
🍆 Fried Eggplant Recipe
1. Cut the eggplant in half horizontally and in half vertically to make stick shapes.
2. Wet rice paper in water and wrap it around the eggplant.
3. Add oil to the pan and place the eggplants at regular intervals to bake evenly.
(If the rice paper sticks to each other, it may tear, so keep the gap between them^^)
4. Finely chop 50g of green onion.
5. Add extra virgin avocado oil, finely chopped green onion, and minced garlic to the pan and fry for 2 minutes.
6. Add 1.5 spoons of brewed soy sauce, 1 spoon of sugar, 2 spoons of grain syrup, and 1 spoon of vinegar to the green onion garlic oil and simmer.
7. Put soy sauce on top of the fried eggplant.
8. Finish by sprinkling with sesame seeds.
Crispy fried eggplant is ready!!
Even if you put soy sauce on the eggplant fries, the batter won't suffocate :)
