This is the most loved Apple Pie in France! Never eaten such a delicious cake!
✔Ingredients:
300g flour 00
100g sugar
a pinch of salt
1 grated lemon peel
200g butter at room temperature
1 egg
◾
1l milk
4 egg yolks
130g sugar
100g corn starch (cornstarch)
8g vanilla sugar
◾
2 apples
2 tablespoons butter
2 tablespoons powdered sugar
half a teaspoon cinnamon

Чудный пирог получился и прцесс изготовления тоже.Нужно будет постараться такой вкусный пирог испечь.

Этот пирог любили печь сестры Цветаевы. У нас он так и называется "цветаевский". Только вместо молока в крем они клали жирную сметану. И не варили крем, а смешивали сметану, яйцо, сахар и крахмал и заливали им яблоки в тесте.

Песочную основу без начинки нкжно поставить в разогретую духовку минут на 10, чтобы немного подрумянить. Тогда дно пирога не будет мокрым.

This dessert is very similar to 'Melktaart/Milk tart' in South Africa. We do the Custard like you do, but we add a knob of butter to the custard when it has thickened (gives it a bit of a shine and makes it look velvety) and bake it in the pastry like you do, but no apples at the bottom and once baked you let it cool and you sprinkle cinnamon on top then cut and serve.

Smash the lemon peel into the sugar with a wooden pestle, it distributes the oils and color into the sugar!

В том рецепте -- Tarte Tatin с кремом шантильи -- отдельно печётся песочная основа, в которую выкладывают сваренный крем и украшают сверху сваренными в сиропе дольками яблок. В духовку это всё класть не надо.

THIS was absolutely delicious! I could not wait the full 4 hours to let it cool, so cut a piece after 2 hours. Fabulous anyway! Crust was perfect, the custard luscious, and the apples a soft al denté. So perfect, all of it! I used the zest of 2 lemons in the pastry because I like zest…might use 3 next time.

Nice, interesting recipe. I would bake the bottom layer first though, not fully baked. It looks kind of uncooked the biscuit base….

Me too. My mum who was a child of the depression scraped everything clean. I was allowed to lick the wooden spoon IF it was my turn. She also rinsed out any residual food in a tin can. I cannot believe how much wastage I see in some cooking programmes. Must be a generational thing.

Красиво, типа чизкейка, только яблоки можно не карамелизовать а сразу положить и присыпать сахаром, получиться тоже самое

Приятно было смотреть,тебя не развлекают какими то байками,не учат чистить 1 кг яблок,нарезать их и т.д. без слов понятно,запоминается быстро навеоное скоро уже не будет надоедливых блогеров от кухни!
