The brain has the ability of incorporating external past recorded stimuli and experiences into the neural pathways during a dream. The brain basically imagines the falling sensation by itself, using its previous knowledge of air pressure, pain and such, creating a fake / imaginary sensation of falling that MIGHT be close to the real thing, but it's still not truly similar to the real deal.
