Much easier to make a slit in side the waistband under the side belt loops, feed elastic through and zigzag over the openings (will be hid by the belt loops;)).

This method doesn't apply to all fabrics/materials... It always leaves an eye sore for the creator, this videos method is brilliant and will be using it on wool

She could have changed the beginning and ending location of the elastic so her vertical anchor stitches would be hidden by belt loops. I imagine this is at least partially what the op has in mind.

If these pants are intended for women, then the zipper opens on the wrong side. Ladies use their left hand (perhaps they are generally more gentle) to open the zipper, while men use their right hand (perhaps to show off their strength?). All over, a beautiful tutorial. Thanks for sharing.

A couple of comments for home sewers. The elastic can either be sewn to the interior seam allowances or started and stopped (and sewn through the waistband) at a location where the belt loops will cover the stitching so there isn't two vertical lines of stitching through the lovely waistband. Buying non-roll elastic should prevent one from having to do the center line of stitching through the elastic/waistband although some people like that look. Great pants!
