There is actually a difference in physics when marbles are under water although it is very small, This has been confirmed by the developer. The difference is very slight and and not really noticeable almost everyone doesn't know. Also the pollen/honey marble is supposed to be an orange (a literal orange, the fruit.) This is also confirmed by the dev.

water does affect the marbles but its not very noticeable. Also the marble that you called pollen is actually an orange. Also you can speed up and slow down time with the right and left arrows.

I wonder if you could change the gravity of the marbles to make “water physics”

Suggestion, go into your settings and turn off FOV. I think that's what it is, it's either that or DOF or DOV. It's the Depth of Field/Depth of View/Field of View setting that makes things go out of focus past a certain point. Works great for realism's sake, but when you get things too close in view, it goes blurry for everyone. It's better for it to off and the view to be clear all the time. Also, another helpful hint reminder, arrow keys left and right control your time scale. You don't need your GUI up in order to control the playback speed, just use the arrow keys on your keyboard.
