This type of show actually teaches you how to cook, rather than the obnoxious "cooking competitions" we see on a regular basis.

The competition shows are meant for entertainment! There are however soooo many shows that do teach and they’re fantastic. Ms Child’s is absolutely lovely. I love just listening to her. However, her techniques are quite dated given the advancements in tools and available ingredients. Enjoy her and all of them! 😊

I must say it's interesting to see all of these early FC episodes because my familiarity with the series was only the last few years of production as they never showed these earlier episodes in reruns. I wonder if all of them were preserved?

This is an old 19th century recipe. When Salmon was common in all European rivers. Even poor domestics had in their contract, that salmon was served only ONCE A WEEK.

@@elizabethhowe2110 Salmon is becoming endangered in new england but Alaska is where they have the majority of it. Most desirable fish here in New England is clams, lobster cod and oysters. 😊

It doesn't matter. All fishing at this point is non sustainable. Within 50 years tops, it'll all be gone. We're coming up on 9 BILLION living humans on this planet. If even a quarter of them are eating seafood, it's not sustainable. Sad, really. We've taken such awful care of this beautiful, and once bountiful planet. 😢

It's such a joy to see a TV chef making a complicated dish. Now, TV cooking shows have been dumbed down to the lowest common demominator. I don't want or need to watch a chef make a salad of cubed cucumber, celery and cheese with oil and vinegar for the entire show. Message to TV producers: we're all not stupid.
