I made this for breakfast this morning and it was so good. It was flavorful and filling. but at the same time it was light and fluffy. Overall it made the perfect breakfast on my rainy morning.

Reminds me of my grandma's Shakshooka - Same ingredients, but you let the tomatoes simmer until it's sauce, then break the eggs without mixing them so its like a sunny-side-up but cooked in fresh tomato sauce. Recommended! Also you can add garlic, chopped onions, even eggplant would be great, spinache, basil etc. etc.....

Low heat don't burn the butter. It would be better to cut the tomatoes in half then core them. Less chance of slipping. Great food. Very creative. I like how you didn't put cheese on it. Cheese takes away from the tomato infusion of the eggs. This is one of my favorite flavors. Eggs isn't only for breakfast. I became diabetic but I can't take the meds. I control my diabetes with food. Eggs are helpful in that I have small portions and don't get hungry so quickly. I've lost 14 pounds in 3 months and holding steady. This is such a good channel. No nonsense. Good food. Happy baby in the background. What could be better and be reality? Not much.
