Tomato Pickle or Tomato Ooragaya in Andhra Style.

Ingredients
about 2 lb. of fresh tomatoes
125 gms of tamarind
1/2 cup of pink Himalayan salt
2 tbsp of turmeric powder
1 cup of red chili powder
4 tbsp fenugreek seeds
2 tbsp mustard seeds
For Tempering
1 cup of oil and some more for extra
1/4 cup garlic cloves
1 tbsp chana dal
1 tbsp urad dal
1 tbsp mustard seeds
1 tbsp cumin seeds
3-4 red chilies
1/4 tsp hing/asafoetida
a handful of curry leaves
Preparation
Wash the tomatoes and wipe them. Cut them into small pieces.
Remove the seeds and tough fibers from tamarind.
Dry roast fenugreek seeds and mustard seeds separately until they have nice aroma on low medium flame. Allow them to cool down and then make a fine powder.
Have a clean and dry glass bottle or jar ready.
Procedure
Soaking
Take the tomato pieces into the jar and add salt and turmeric powder. Let them soak for 48 hours or 2 days.
Drying
On the 3rd day, you will notice that a lot of juice came out of tomatoes. Squeeze out the tomatoes and spread them on a plate. Leave out the juice in the jar. Dry them under the Sun until the tomato pieces are completely dry and become crispy. Soak the tamarind in the tomato juice.
How to dry tomato pieces
1. Spread the tomato pieces on a plate or on a cloth. Place it under the Sun and cover them with a cloth or net. Dry them until they are crispy.
2. Put them in a dehydrator and dry them until they are crispy.
3. Turn on your oven to its' lowest temperature and place the tomato pieces in it. Dry them until they are completely dry and crispy. Mix them in between so that they don't get black or brown.
Mixing
When your tomato pieces are ready, grind the soaked tamarind, along with tomato juice. Take the tamarind mixture into a bowl. Add red chili powder, fenugreek powder and mustard powder. Also add the dried tomato pieces. Mix them well.
Tempering
Take the oil in a pan which is on medium heat. When the oil is hot add chana dal, urad dal,mustard seeds and cumin seeds. Stir them. When the mustard seeds are popping up add red chilies by pinching them into small pieces. Add hing and curry leaves. Then add the prepared tomato pickle. Mix it well.

Hi , it looks very interesting...but instead of pink Himalayas salt can we use normal rock salt. Also can we keep it out for a year.

Which oil should be used? North Indian make pickle in mustard oil but I know south Indian pickles are not made in mustard oil.

South Indians use sesame oil for most of their pickles. Next to sesame oil comes the groundnut oil or peanut oil. I used sesame oil. With peanut oil also the pickles taste good. Alisopil ji enough salt is used n tomatoes r dried well it can be kept in room temperature for a long time.tamarind in january month tomatoes we can get at cheaper rates n new tamarind will be available. garlic is option

We keep tamarind soaked in tomato juice also in the sun. Is it not necessary. But for adding mustard powder we make it the same way.

Yes, you can use white salt to make this tomato pickle. Pink Himalayan salt and sea salt are better options for cooking. So I try not use white salt. But you can use if you want. This pickle can be stored for the whole year. Add enough oil on the top of the pickle. Make sure there is no moisture in the pickle. Don't use wet spoons or wet hands. Mam I made it . It tastes very nice but it is too salty how to reduce salt effect and ya I don't eat potatoes so please tell me how to reduce salt without use of potatoes

Set your oven temperature to it's lowest and put the tomato pieces in a tray and place the tray in the oven. Check back in every 2-3 minutes and stir them. Repeat until they are dry enough. I by mistake added the tamarind to the cut pieces of tomato in the beginning itself after cutting. Is tat ok?

Don't worry, keep it just like that for 3 days. On the third day, remove the tomato pieces from tamarind, squeeze out the juice and dry them in the Sun. They are about 2 pounds of tomatoes. About 3 (medium to large) tomatoes are 1 pound. My tomatoes are small to medium size I think. So I took roughly 2 pounds of tomatoes.
