Kvas is a fermented rye-based drink. It does contain a minuscular amount of alcohol, which is removed when kvas is industrially produced.I would use horseradish, radishes and dill in okroshka. I personally do not add bologna, only eggs.

In my county, there is a eastern european themed shop and kvas is very good there. I drink it almost everyday because it's cheap and it tastes really good. It's called "Obolon" as I remember.

Garlic must not be there in okroshka. Try the correct recipe of this meal. Not all ingredients. Secondly, this meal is used in hot weather in Summer. And soup from milk and spaghetti you tried before is for kids in kindergarten, not for adults usually

American friends are not the bunch you have to ask an opinion about quality of Soviet era culinary giant recepies, they will not understand it , anyway; Soviet era kitchen assembled 15 countries and more then 150 nationalities under it's wing, with each contributing something special to the table from their nations cooking gems; In my opinion, North American food table is very limited and unhealthy,it's only good with steak, apple pie, KFC- style chicken and few more options, it's not a match for USSR massive collections of culinary delicatessen

Kvas is more like shandy. It has about 1% of alcohol. Kvas must be a sour taste for okroshka. Not sure the kvas you used is suitable for okroshka. BTW in WWII German soldiers were forbidden to eat it
