You got it perfectly. Filipinos (and Asians) respect our food, we don’t want to waste any. We respect the effort of the farmers who grew/raised the food and cooks who prepared it for us. When an animal is killed to provide sustenance for us, we don’t want it to be wasted. And by eating a very wide variety of food, there is less chance of denuding the environment.

In my family, we eat dinuguan with pork belly, or meat. My father was not fond of eating the "innards" so he would cook for us with meat. I've tasted it with the "innards" but find it too gamey. Some restaurants offer it with just meat and it tastes different and less what you would say "irony"

I love dinuguan while it is thick in consistency. It is yummy. It is pig's blood and to think of it is just nasty and disgusting. But so good at the same time. Same thing with sisig! I love also the pig organ meat on a stick. Well I love Filipino food so much!

Dinuguan? Blood stew? At least Filipinos cook it well unlike Westerners who prefer their steaks medium rare or partially cooked with red juices (blood) dripping..... l love spicy dinuguan cooked with chopped banana heart (puso ng saging) in coconut milk and a bit of sugar to taste....Kinilaw seafoods with thinly sliced radish (labanos) is another favorite of ,mine...

My daughter inlaw is an American filipina and my grandsons are half Filipino. I found i don't like dinuguan, dried fish, and balut. I tried balut and felt sick afterwards. Im sure it was partially psychosomatic.

i love dinuguan! but not too much of internal organs now that am a little older for uric acid reason. lol... when you go to Spain, dinuguan is familiar or they say blood or black puddings or blood or black stew and some europian countries cook animal blood too and why not?
