First, this video begins by describing what tannins in a wine are. They are a chemical compound in wine that is attracted to various proteins. Tannins come from plants. Because of this, tannins can be found in various other foods and drinks, including apples, tea. and dark chocolate.
Second, tannins are the bitter taste in wine. They are the substance that causes red wine to be dry. For example, if you steep tea for too long, the tea will have a bitter taste. That is due to the tannins from the tea leaves and stems.
Third, tannins are only found in red wine. This is because tannins are found in grape seeds, skins, and stems. Red wine is soaked with the grape seeds, skins, and stems. White wine is not. That is why red wine has tannins and white wine does not have tannins.
Fourth, some wines have more tannins than others. For example, Cabernet Sauvignon wine has higher tannin levels than Pinot Noir wine. This is because Cabernet Sauvignon grapes have thicker skins as compared to Pinot Noir grapes. Because of this, Cabernet Sauvignon wine has a higher tannin level than Pinot Noir wine.
Fifth, red wine can be described on a scale of tannic to soft. Tannins can also be described as gentle to harsh. Decanting a red wine can "soften" its tannins, which make the tannins taste less intense.
Sixth, tannins in wine pair well with salt and fat in foods. Salt can soften tannins in a wine, while tannins wash away the fat in your mouth between bites of fatty food. This is why tannic red wines pair well with cheese, charcuterie, and steak.

@@WineTherapy No problem. I would highly recommend trying it (especially if you drink Pinot Noir). The basic Nebbiolo label is more of an "early drinker". If you happen to like it, seek out a Barolo or Barbaresco. These are the VERY tannic wines that are built to age (both are still made from the Nebbiolo grape). Cheers!
