Cooking in America is back for season two, this time hosted by Top Chef’s Sheldon Simeon, native of Hilo, Hawaii. On this first episode, we visit Simeon’s family’s kitchen in Hilo, where he prepares a Filipino feast for his relatives and friends and introduces some of his favorite places to get produce and fish on the island. This is seriously how cooking goes in most rural Filipino households. During fiestas and celebrations, those large woks and long laddles come out and you cook a bunch of different stews and everyone's butchering chickens and pigs, or chopping up veggies and just really coming together. The island nations seem to have that way, very communal and together..

My Mom and Dad are 100% Filipino !! hell yeah LOL. Not half or part Hawaiian ( Polynesian ) like most Filipinos in Hawaii claim.. Respect to that Chef

you pretty much capture the essence of how it is done in Hawaii, as we call back yard style. Hawaiian home cooking. every dish presented in this piece is going to be present at any gathering of this nature. those are the best. great piece.

Reminds me of my family; half native American half Congolese. Granddad hunting for for food to save money and learning how to grow foods and be crafty when it comes to food. Sardines, canned tuna, caught fish, game, spam, etc were always in the household. And my grandma, uncle, aunt, and cousin used to live on Oahu for years

hecks yeah i agree i've been to both and Canada is way more beautiful than Hawaii could ever be...so you should feel blessed its overated for real for real its like southern california with volcanoes basically...and everyone is an mma fighter lol...but most of the folks are genuine good hearted folks but its a vacation spot trust me if the people lived in the mainland for a few years they would love it and stay here especially in the Appalachian mountains on the east coast Gods Country!

OMG he's using really traditional Filipino ingredients! Which part of the Philippines were his parents from? The fern shoots, the turmeric leaves, we use those for cooking! The fern shoots we usually cook as a vegetable and sometimes blanch and make it into a salad. The turmeric leaves we usually use for cooking pork stew and sometimes use it to wrap food we steam or grill.

i just finished watching the video. i like how he prepared the paku and pinacbet. it would have been nice to see the final outcome of whole baked stuffed uhu. where did he purchase his cooking tools (wok, wok burner, paddle, etc?) are the woks 22-in or larger? the man is full of aloha and genuine goodness. nice to see someone representing the 808.

what's the beautiful turquoise marked fish here 1:28 reminds me of this fish that people get for their saltwater aquariums, I can't remember the name but at one point as a kid I was obsessed with having one if I ever got a fish tank... which I never did heh
