Time: 40 minutes
Quantity: 6 pieces
Ingredients:
400 g corn flour
1 tsp ground flaxseed
1 teaspoon salt
200 ml of boiling water
100 ml of cold water
1 tbsp olive oil
Method of preparation:
Sprinkle salt into the flour and mix.
Pour boiling water over the flaxseed, stir, and then blend with a blender to make the consistency very smooth. Cool and combine with flour, adding cold water as well.
Knead the dough to a consistency resembling pasta dough. While kneading, add the olive oil.
Divide the whole dough into 6 parts, form them into balls, which you roll out into thin pancakes on a silicone mat. If you use a wooden rolling pin, you must make sure that it is well greased. Otherwise, the dough will stick to it.
Fry the tortilla in a dry, hot pan for about 30 seconds on each side.
Such a tortilla really has many uses. We serve salads, falafel in it, and next time, we will pack a tempeh kebab in it.
If you plan to leave the tortilla for the next day, keep in mind that the gluten-free batter is bound to stiffen, so you'll need to drizzle it with a little water and reheat it in the pan before serving.
Store the tortilla packed on a plate tightly wrapped in cling film.
