GENKIYA is a ramen shop in Takaoka. Its ramen broth has a tonkotsu pork bone base that's not heavy, but offers umami. It is this broth that's nice to eat with rice. The flavor changes when you soak the seaweed in, and it changes again if you add pepper, ginger, chili paste and/or garlic. Ginger lightens the broth, but I highly recommend the chili bean paste (toubanjan). This was an excellent addition to the broth at the end. Goes very well with the soup! You can also order "big" gyoza (which is regular size by Chinese standards). It's decently good. A local favorite. Come and try! ‪@TastyWaterOM‬
