I love videos like this that don't have any kind of narration. It means I have to focus closely on what is going on. Also, I often find myself questioning and doubting the accuracy of things that narrators say, when a video has narration. Not so in this one. Sweet video, thank you for sharing it.

i prefer when they say what it is there doing ...even more when they know why and can explain it. this process is relaxing to watch but i know a little bit about chemistry and i have played some with crystallization. like most things its a simple process that any can follow but has an art and skill requirement to do well. in its simplest terms they created a super saturated solution of "i suspect cane extract" heated it to the temperature required to change its structure and allowed to cool and crystalize . the skill and art .....knowing the temps for when to stop heating and how quickly to cool getting either or both wrong results in taffy or hard rock candy lol the paddling will have to be done constantly and preciously or the crystals wont form and it wont end up as sugar....on the flip side it isnt a loss it can be reheated and tried again or used as candy.

Yet they did not wash the stocks before crushing them. Then there is alot of metal dust from metal scraping metal. I wonder if that sugar is mildly magnetic. Lol
Blessings. Beautiful Memories. My father was a Sugar Cane Farmer. My respect to the Gentlemen making the sugar process.

In India, 1. That juice extracted from Sugarcane we call it as sugarcane juice ( ganne ka ras) . It is very tasty if we mix with little lemon juice and little ginger juice. 2. We also follow same process but end product is called Jaggery (Gudd). We use it for make the most of the sweet dishes.

I've been there. No molasses. Only fresh cane juice and boiled into thickness. When tempature cool down, it's all done. Another flavor is ginger flavor, which is commonly used in Taiwan cosine, giving a warmth in mouth and heart in winter time. All is nature and pure, I gurante. Buying for years.
