For Vietnamese people, rice is as precious as pearl. Cốm, the sticky green rice is considered the “pearl of a pearl”. In the past, Cốm(Vietnamese green sticky rice) is such a special gift. Good Cốm requires complicated and laborious processes such as “Roasting, Pounding, sieving, Sifting.“
Alexandre de Rhodes, the first French missionary who visited Vietnam, was so impressed by Cốm, that he even included this traditional snack in his writing.
Cốm can be used to make many kinds of dishes and snacks. Today, I intend to start from the harvest of the green rice!
