IMHO can consider amongst the Top 10 "traditional" fishball noodle in SG. (Traditional as in nothing fanciful) Chilli can be very spicy if you ask for more chilli. The combination of chilli, lard, vinegar and fried shallot oil is just nice for the mee kia. Fishball and fishcake is the traditional hand made type which doesn't have any fishy smell. The only negative thing is uncle uses the same hand to collect $ and touches the noodles cause he is 1 man show, no helper but he is quite fast churning out bowls of noodles just by following his own SOP. I read somewhere his wife used to help him but after she passes away, he is all alone managing the stall. This might be the reason why. However, younger generations might not be too comfortable when they see such thing. But there's a saying "rubbish eat rubbish grow". Some things just taste better when you just forget about "hygiene". Although I would also prefer uncle to practise a bit hygiene but I got no qualms going back despite the lack of it.

He is the best food critic I have watched on KZfaq, even better than Food King from NOC. Don't get me wrong, I enjoy NOC food king a lot. But this man here, is so precise and really knows to appreciate good food. Thumbs up.

I always enjoy Greg's videos on local food, you have good taste in the music very soothing, I think Mark Weins is the best foreign food blogger and Greg is the best local one! By the way the roast duck stall behind you looks delicious!

Yea...like the more down-to-earth kinda of food intro (hawker food in detail) which resonates with most Singaporeans better. Other food bloggers are mostly after sponsors and large food businesses.

We moved and lived in Ghim Moh estate in 1975/76. Nice & quiet estate, only 21 blocks then including the market. Thye Hong fishball was among the first few pioneer stalls still around together with Lee Lau San Chwee kueh and the coffee stall next to TH fishball. Love TH meepok, especially their chili, lots of pork lard and the homemade fishball / fish cake. My favourite MP since ‘75 till now still go back frequently. 🔥. Power.

Actually less than 20 blocks even before the tear down of the old police post. Cost Blick 20 is market not hdb block. Now without block 9,10,11 its about 15 blocks only. Love this location cos we can buy anything at cheap price at this tiny lovely estate

Loving your contents in bringing back memories through the food and places that we patroned when we were younger.. and am so happy to see them still around. The nostalgia.. Places like Ghim Moh, Bukit Merah, Alexandra, Bukit Timah, Upper Bukit Timah, Beauty World, West Coast, Clementi, Dover, Redhill, Tiong Bahru.. (I'm just listing places i frequent 25 years ago)

The chilli is different from other stall too. I love this old school feeling but need to wake up very early for this.

Bro, try Li Xin Chao Zhou Fishball noodle at 22 Lor 7 Toa Payoh. One of the best hand made fishball noodle. They only provide meepok with 5 fishball n like that long Q almost 1hr nonstop throughout. 3 tumbs up. The zup is amazing...

ahhhhhhhhhhh their fish cake always must buy separate to dabao. There's a branch at Bukit Batok that's also been frequented by my friend since she was in primary school.

Just chance upon this stall last week and in fact had the mee kia dry yesterday. I say this is the best fishball noodle in the neighbourhood. Love the contrast between the flavourful lard oil sweet soury spicy shrimp based noodles with the clear broth and clean tasting fish balls. Absolutely agree with your deep analysis. Hahaha.... I am beginning to think we have the same tasting dna traits.

If I remember correctly, this stall also used to offer noodles made of pure fish paste, which is unique and very interesting. But I think it stopped offering them since last year.

have eaten here since childhood days - love it. Btw have you tried the roast meats at 九江 in ghim moh as well as the mee siam (teochew) next to 九江? Be great to see them featured.

Yes, planning to feature the roast meats but not sure about the mee siam. Still trying to understand it. I dunno why got no tau cheo in it 🤔

You need to do a television series and get onto netflix. There's perhaps one other food narrator who delves into the history of the hawkers and food in more detail and that's Axian (Jason Yeoh).

He does have fried fish cakes, IMO is a tier (S+ tier) better than his non-fried version (S tier). Have to come earlier in the morning, usually reserved only for regulars.

There's a wanton mee stall at Ghim Moh Hawker that has a "secret menu". If the uncle is willing to cook, and if he has the ingredients, the seafood hor fun he makes is super tasty.

@@GregoryLeow I forgot the name of the stall, but it's in the middle of the hawker centre. The stall also sells 油鸡面, fried rice and curry chicken noodles. There is a chance the uncle might refuse to cook though, depending on the time of day and his mood. 😅 He might be more willing during the evening.

No. The real deal for fishball noodle is at tiong baru, it's called hui ji. They offer u yong tau fu to go with it too. All this recommendations of fish ball taste so normal and very similar to one another. Try hui ji at tiong baru. That's the real deal been eating 3 over decades never got tired of it. Brought my friend there to try, he claim he had try all the best fishball noodle until hui ji. Lol first time in his life he ate 2 bowl of it, I had know him for 2 over decades this is the first time he ate 2 bowl.

I used to frequent this stall all the time for more than a decade but his hygiene is absolutely horrible. After his helper left, I stopped. These days I just go to Holland Drive, Redhill or Old Airport instead for the exact same thing.

I encourage you to tell folks who visit these centers toilets to wash their hands with soap and dry them.
