Green moong tadka is a flavorful and nutritious Indian dish made with green moong beans (green gram) and a tempering of spices. Here's a simple recipe for making green moong tadka:
Ingredients:
- 1 cup green moong beans (green gram), soaked overnight
- 2 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 2-3 green chilies, slit
- 1-inch ginger, grated
- 4-5 garlic cloves, minced
- 2 tablespoons oil or ghee
- 1 teaspoon cumin seeds
- 1 dried red chilli
- 1 bay leaf
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon jeera powder
- 1 teaspoon garam masala
- Salt to taste
- 1 pinch hing
- Fresh coriander leaves, chopped (for garnish)
- Lemon juice (optional)
Instructions:
1. Cook the Moong Beans:
- Drain and rinse the soaked green moong beans.
- In a pressure cooker, add the moong beans along with 2 cups of water and a pinch of salt.
- Pressure cook for 3-4 whistles or until the beans are soft but not mushy. Set aside.
2. Prepare the Tadka:
- Heat oil or ghee in a pan over medium heat.
- Add cumin seeds,dried red chilli,hing and bay leaf Allow them to splutter.
- Add minced garlic and grated ginger. Sauté until the raw smell disappears.
- Add chopped onions and green chilies. Sauté until the onions turn golden brown.
- Add chopped tomatoes and cook until they become soft and mushy.
3. Add Spices:
- Add turmeric powder, jeera powder, black pepper powder and salt as per taste. Mix well.
- Cook for a minute until the spices are well incorporated.
4. Combine and Simmer:
- Add the cooked moong beans along with any remaining water from the pressure cooker.
- Mix well and let it simmer for 5-7 minutes, allowing the flavors to meld together.
- Add garam masala and salt to taste. Mix well.
5. Finish and Serve:
- Garnish with freshly chopped coriander leaves.
- Optionally, squeeze a bit of lemon juice for a tangy flavor.
- Serve hot with rice, roti, or as a side dish.
