I remember catching ribbon fish off the Jacksonville Pier, but we never ate them. They were the preferred bait for Kingfish and I had a buddy who fished the Kingfish tournaments.

You need a sharper knife than a cleaver to gut a fish. A Japanese deba knife, fillet knife, a western chef’s knife, or even a boning knife would work well without destroying the clean lines.
