I show you step by step how to cook Texas CAB (Certified Angus) Brisket on the Weber Smokey Mountain (WSM). This will show you the correct proportions for Salt/Pepper mix to obtain the best brisket you've ever tasted!
1/4 cup Worcestershire sauce to help adhere rub (Oil can be used)
Rub Mix is 40% Kosher Salt and 60% Crushed Black Pepper
1 TBSP Garlic Powder (optional)
1 TBSP Cayenne Pepper (optional)

Wanted to add a comment, Troy knows his BBQ! If you're looking for a great rub for brisket keep it simple, salt, pepper, garlic powder and cayenne is ALL you need. Your bark will turn out excellent! One suggestion if you are having trouble with smoking your brisket and can only afford "choice" cuts I find low temps will bring you the best results. Keep your pit at 225 or lower but be patient, 11-15 hours is a long cook but your brisket will be tender and juicy. I personally don't wrap my brisket until I pull it and then wrap it in foil and a towel for a couple of hours in a cooler. Hope that helps everyone, keep smokin'...

That is some great advice Smitty!!! I have found the same when cooking cheaper grades of beef. I've cooked a Select brisket at 215F and it was super tender and juicy. Not as juicy or tender as Prime, but very good!!! Yeah, it did take about 18 hrs, but I love those long cooks getting to smell that smoke and chill out with some tunes going in the background. Good times!!! Cheers brother!!!

T-ROY COOKS I think that is why it's not science; it's art! Two questions: does the water bath act as a temperature stabilizer (seems like it would); when stacking meat (i.e., a brisket over a pork butt) does the upper meat baste or spritz the meat on the lower rack? Troy I enjoy your videos, they are more realistic and, as a Texan, I can understand the way you talk.. Things don't always work out the way we think they will when we fire up a smoker and you don't mind your subscribers seeing how it all goes down, even when it isn't perfect. My last cook was two eight pound pork shoulder butts. I put one on the bottom grate and the larger one (about a half pound bigger) on the top. I monitored both levels. As you noted and suspected, I found the bottom level to run about ten degrees cooler. I use foil wrapped large river rocks in the water bowl to keep the temps moderated. When the roasts got to 180, I spritzed a final time (I use apple juice), and double wrapped them in foil. Then I added fresh chunk charcoal (I like Jealous Devil) and opened the vents so I was running at 300 or so. Two hours brought the meat temp to 205 and after resting for an hour it absolutely fell apart when I pulled it by hand. I have to thank you, T-Roy, and Harry Soo, for many memorable cooks!! ❤

Thank you so much for putting this up, helped me a ton today. Had my Smoky Mountain about 4 months, 3rd time using it and 1st attempt at a brisket. This morning, was 55 degrees and 20 mph winds, right now is 29 degrees and no wind. This is an education, to say the least, 8 hours into a 16 pound brisket and best I can say is temp has stayed between 200 and 250. 8 hours to go, will either make it work, or can resole shoes. I'll try the Minion method next time. I learned in the 'feed the fire to regulate temp' crowd, so am committed at this point. Rookie mistake, but maybe not, will see. Will subscribe, thanks for taking the time to put this together.

My fellow Troy, great video. Gotta say, love the attire! Sandals, even. Reminds me of my late father (also named Troy, who I took after). I can't wait to get my WSM in a little over a week from now. I'd love to get a brisket, but it's too darn expensive in these parts of southwest Virginia. I love smoking chuck roasts in lieu of 'em.

I've just ordered the WSM 22, that completes my set of all 3. My first was the 18" that I have had about 12+ years. It was one before the dome temp gauges and the ash catchers and probe draumets , Although I have added all but the ash catcher. I have cooked literally a ton of q over the years on it and it is still my go to smoker when it has to be my best. Enjoyed your video, lot's of fun with the WSM, thanks and keep them comming

Watched two of your videos, both were great. Love the way you took the time to explain everything. Your video on wrap or don't wrap convinced me to not wrap. Figured wrapping will cause some steaming and that will change the meat flavor. I love the minion method. Glad you used it. You also proved you don't need a lot of seasoning to make a great smoke out. Smoking a brisket tonight and going to use your method. Only difference I am using a gourmet smoker. Hope It turns out as good as your look. The one thing that you said it right. Just have fun with it.

The moment I heard you I knew I had found my brisket man....native Texan here (the HEB clinched it that you were too)just your voice makes me home sick and the brisket almost made me cry...have lived away from home nearly 35yrs now (now WAY south of the border in Guatemala as a retiree)...no brisket for 1,000 miles. Great pork here in Guatemala terrible beef (skinny range fed and "pasture" to table the next day so TOUGH..makes good tasty burgers though when mixed with some ground pork. Bought hubby a Weber Smoker and put it together today...smoking tomorrow....thanks for your expert cooking lesson!

I was struggling to keep the heat up on my Smokey mountain smoker, even during summer months. Weber has great instructions for their grills, but are very lacking for their Smokey mountain smoker instructions. This video was a game changer for the charcoal setup. I’ve struggled during warmer weather to keep the temps up, but this video got me dialed into the minion method which got me through a cool misty day in December. Game changer. Thanks @t-roy!

Troy, I got the WSM for Christmas. Did my first smoke the day after. Had no idea what I was doing but it came out well. Did a rack of lamb and some bone in chicken breasts. 250 for 1.5 hours with hickory wood. Came out delicious. However, after watching your videos, I've learned so much! Love your attitude, the fact that you show when things don't go as planned and that you love your little dog (I've got 2 little ones). Just wanted to show you some love and respect, but more importantly, just to say thanks. I watched the started video on how to use the vents and this one here. I'll have em all watched shortly ha. Thanks you for your wisdom. I always go back to your videos for refreshers. Have a WSM 22.5 and took your advice and bought the Cajun Bandit door and the larger charcoal ring. Told all my buddies about your channel and we all swear by it. After the pandemic we all upgraded our BBQ skills with a great assist by you.

Troy I just watched 2 of your videos. One was how to set up the WSM, the other you brisket and pork butt. You are brilliant and I am sold. I going to up my game and move from the 22 inch Weber Kettle to the WSM. It’s a MONSTER. Thanks for all the information buddy. Really appreciated

Hey there T-Roy I wanted to share that I found one of your videos about 8 months ago for the peel-a-pound soup recipe and have repeated that receipe countlessly for when I have eaten bad or needed to get back on track, so thanks for that! Coincidentally, I am in the midst of buying my first house and want to begin smoking, and just so happen to come across another one of your videos, this one. The longest youtube video i've ever watched. Great content, really informal but alot of information and very helpful, thank you! I've subscribed and will definitely go through the Amazon links. I used the minion method on only my 2nd smoke on the 22in Smokey mountain. It was perfect. Temp stayed around 225 overnight and I checked a few times throughout the early morning. I had 2 7lb briskets, a 10lb pork butt, and a small chicken. I used 18lb Kingsford blue and the brisket and chicken were perfect. I ran out of fuel for the pork and had to cook an additional 3 hours. Hello again T-Roy! I'm doing an all night smoke on the Weber Mountain preparing a brisket on top and a pork butt on the bottom. Getting ready for Labor Day 2022. I had to watch your video again for an update. I did the brisket pretty much as you did but I'm smoking the pork butt in an aluminum pan...on the lower rack. I always enjoy your videos. Thanks for the help.

Troy, you are a Master Griller/ Smoker! Great tips about not letting the brisket come to room temperature. That is something I never knew. That brisket, is a Masterpiece!

Thanks James, the brisket flat turned out a little dry, but the point was perfect. Guess I'm just used to those Prime briskets from Lobel's? This one from my local store was USDA Choice grade. Still turned out wonderfully though and the flavor was spot on. I appreciate you watching!!!

I just got a Weber smokey mountain grill a few days ago and planning to smoke my first brisket tomorrow. I even have the same 16 lb bag of HEB charcoal! 😆 Couldn't have asked for a better video T-Roy! Great job!

Good point about the charcoal! Kingsford is the most consistent I've found for time and temperature.
