We are making chicken doner kebab at home! It is also known as shawarma or gyro. You can make from beef or chicken, it is easier to make at home then you think!
Famous Turkish street food doner kebab can be made from either beef or chicken. Today I am making it from chicken breast but you can also use breast and boneless thighs. We will prepare a chicken marinade sauce, marinade our chicken pieces and freeze. I will also show you how you can make the soft pillowy pita sandwich bread we use when making doner sandwich and will show you ideas to add-on to your shawarma or gyro sandwich.

Ingredients for chicken doner kebab:
For the chicken marinade:
1 onion (grated finely and add only the juice)
2 tbsp yogurt
1 tbsp pepper paste
2-3 cloves of garlic
3-4 tbsp olive oil
tsp each paprika, cumin, black pepper and 1+172 tsp salt
1kg chicken breast or mix of breasts and boneless chicken thigh
For the sandwich pita bread "tombul ekmek"
Ingredients For Turkish Pita Bread:
1 cup lukewarm milk
1 tbsp dry yeast
1 tbsp sugar
1/2 cup yogurt
1/2 cup water
about 5+1/2 cups flour (don't add the final half cup before kneading. Add gradually to make a soft somewhat sticky dough)
1 tsp salt
