I applaud you for finding such a good way to tackle this challenge. I don't have ARFID, I'm just picky, but I know several people who do and not only is it very challenging for them to go through life with such restrictions, but it of course also makes it difficult for friends to accommodate them, given that something like going to a restaurant on a whim is very likely to make the person with ARFID feel left out. I'd be interested to see what you think of some particular German foods, especially Spätzle. Spätzle are a kind of pasta made from only salt, flour and eggs. It's my favorite food, since you can use it as a side-dish to almost anything. For example I regularly make Spätzle Bolognese. To be clear: Spätzle is not Pasta, Italians and Germans would get very angry with you if you thought it was, but they're very closely related.

casein is magic. addictive! haven't had in a long while but cheese is such a wide spectrum you could probably do a whole series on just different types
