I was the cameo white boy at a Filipino birthday. My friend had a food spread like no other. Prior to the party, I was very familiar with pancit, lumpia, adobo, and a few other classics. While getting some food, I stumbled across sisig. Most amazing food ever. Definitely my top 3 favorite dishes in the world. If westerners can get past what it is made of and just try it, they will be floored. Salty, sweet, spicy, and sour perfectly mixed with different textures. So at the party rolled up to me and asked how I was liking the food. I told him, what is this one (sisig)? He told me, but then said, "you know what it's made of?" I told him, "I could care less, it is absolutely amazing!"

Your kidding, Most of the is horrible, I do like pork sisig. But most of the food is either sweet or sour. Most of the food is made with poor quality cut of meats, like fish heads, or lots of intestines.

Sometimes food dictates how the culture, way of living or way to produce ingredients evolve. So it is same to say, that if there are people don't appreciate the cuisine, they do not appreciate the way of life. Using poor cuts of meat, is a result of adaptation and survival of what is available and make it good. Philippines experience so much colonization and oppression. Where as good cuts and ingredients are serve to rich people. And to make food for filling the stomach to continue for the day, as long as it is good would tell you how strong and ready to adapt. Ever wonder why sushi is served in small servings? Back in the days there are few farmlands in Japan, the size of habitable area are not comparable to mountains. Scarcity reinvents foods, you should appreciate food and culture.

@@Airia_11 That definitely not why SUSHI are tiny or bite sizes. Do not compare the HIGHLY REFINED Sushi to the very crude Sisig which has no identity. Sisig in Pampanga that is fine. But Sisig was destroyed by sheer ignorance and corruption. Now 99% of Sisig sold in the Philippines are fake.

Sisig. My FAVORITE!!! Thumbs up if you love sisig too! I've only had it a handfull of times when I was in the Philippines, but I've made it a few times for Pacquiao fight parties, back in the USA. I have to keep some for myself before heading to the party, because I know there won't be any to take home. My method takes some 3 hours to prep and I source a leftover Lechon head to start. I have no other choice but to use some pork chop to make volume for serving several people. 2 ears from the Lechon isn't enough to start, so I do buy raw ears, boil them, then grill. The pork chops are grilled. I also grill some chicken livers as well. Because I don't want to make a huge mess when getting everything into tiny pieces, I have no choice but to hand cut everything into the small pieces it needs to be, without using a cleaver. The grilled chicken livers are mashed into paste before mixing everything together in a wok. When I serve, I use butter in a cast iron skillet, mix in the prepped sisig, and cook it down while parts of it get crunchy from frying in the butter. IMO, this is truly the pork treasure dish of the Philippines and more than just a food to go with beer. I do cook it with diced onions and a few chili peppers. By the time the chopping is done, my hand is really sore, but the results are worth it! SARAP NA SARAP NAMAN!!!!!

@@HunterPh I won't say it's authentic by any means, but I'll say that I had something called sisig, at a local filipino restaurant, and it was horrible. Thank you for your kind comment.

Looks tasty! And no wonder that Bourdain was your idol! He was an amazing man who encouraged people to give other cultures and foods a chance. He opened up the world to so many. Bourdain once said, "Your body is not a temple, it's an amusement park. Enjoy the ride." and "If I'm an advocate for anything, it's to move. As far as you can, as much as you can. Across the ocean, or simply across the river. Walk in someone else's shoes or at least eat their food. It's a plus for everybody." Shame what happened to him

Sisig with egg is not SISIG at all. Sisig is a drinking food. Sisig is not a dish to be served with rice and glazed with mayonaise or raw egg.

While she is credited with creating modern sisig, the idea of sisig is much older than that. Sisig has changed drastically overtime! Sisig comes from the word sisigan which means "to make sour". It was first recorded in 1732 when it was described as a "salad, including green papaya, or green guava eaten with a dressing of salt, pepper, garlic and vinegar". Pork didn't come into the picture until the US took over. When they were stationed at the Clark Air Base, commissaries preparing the meals for the troops would throw out tons of pig heads and innards. Nearby restaurants would take the discarded off-cuts and incorporate them into the sour salad, serving them with beers at their late-night joints by the railroad. And then in the 1970s, Lucia Cunanan took it up a notch by grilling the boiled meat, chopping it up, frying it with pig brains and chicken livers, then serving it on a sizzling plate.

Had Sisig a few of times when we travelled the Philippines. I did not know 100% what exact parts of pork are being used for that dish. Either way it is delicious and a must try when visiting the Philippines!
