If I'm not mistaken, some "vegetarians" do eat chicken or turkey as well as vegetables if course, where vegans do not consume ANYTHING that is an animal or animal bi product such as milk, eggs, etc.

I'm vegetarian and if a store didnt have fake meat I would either go to a different store that did or just make pasta WITHOUT meat.... like pasta is a very common no meat necessary dish. Meat isnt necessary for every meal and even if her friends do eat meat and came over to eat doesnt mean she has to cook it for them, they can have one meal without it. I'd personally try to make something yummy witout meat to incourage them to skip it once in a while.

She can't just eat out with the whole family once she has one and the children will get bored of eating at fancy restaurants and fast food restaurants all the time.(well technically she could but you get the point) There's no doubt in her being independent and not needing anyone other than herself but cooking is a very important thing to know how to do.
