Use the regular potato chips, not the ones with funky flavors. We made this when I was a kid and it was always the regular chips because the spices would burn during the cooking process. If you want a less salty version then use the reduced sodium chips instead.

Sorry, but I gotta say you didn't fry that properly. Looked like you dropped it in before it was hot enough to properly fry it. You could've done it in three steps for the breading [Me personally I use chicken flour with heavy seasoning mixed into it, then a wet batter then I'd dip it in my bread crumbs.] It works for me, and then you over cooked it because you dropped it in too early.
