He does not use the e-break very often, but he still does. Otherwise you could not enter the first corner after the finish line like this, aswell as the second U-Turn. You can even see it on 2:07.

***** Just be thankful Polophony gave you atleast 1 chaser.. Turn10 didn't even give us 1 in Forza 4. I don't even think we got the option for a 1JZ. We can drop a 2JZ in an Altezza and a Soarer though, that's the closest we can get.
