Ingredients:
• 1 kg lamb rib or shoulder, cut into large chunks
• 1 kg aubergine / eggplants, peeled and cut into large pieces
• 50 g / 4 tbsp clarified butter
• 8 - 10 garlic cloves
• 4 fresh green chilies
• 1 tbsp chili paste
• 1 tbsp tomato paste
• 1 tsp pul biber, Turkish chili flakes / Aleppo peppers
• 1/2 tsp black pepper
• 2 tsp salt (extra for soaking the eggplants)
• 1 kg tomatoes, peeled and finely diced
• 1/4 cup sumac (infused in 1 cup warm water)
