Recipe
350 g cornmeal
1/2 can coconut milk ,good quality
1 to 2 cup cold water to mix cornmeal before adding to the skillet. Once in the skillet it will need more, 2 to 4 cups
1 bell peppers is fine or 1 /3 of each ( more colourful this way.
Oil
2 tbsp Green seasoning
1 medium onion
4 cloves garlic
5 to 7 sprigs of thyme
The other 1/2 can coconut milk
2 tbsp unsalted butter
Cayenne pepper
A touch of all purpose
Salt and pepper
Garnish with spring onion /scallion / chives
Curry prawns recipe
500 prawns
2 tbsp coconut oil
5 pimento seed/ all spice powder
5 cloves garlic
3 to 5 sprigs of thyme
1 medium onion
1 tbsp curry powder
1 large carrot
1 can coconut milk
200g okra
1 scotch bonnet pepper
1/2 pack of fish tea seasoning or fish seasoning or a good quality all purpose seasoning
Taste for seasoning and balance to ur liking
The key to cooking this dish is low heat or Medium to low after all adding all the ingredients and it’s boiling . Adding water / stock and stirring while cooking, when not stirring cover & leave to sweat for moisture to help steam it. This show take about 3o to 4o minutes.
