Hey guys!
I really hope you're all doing well. This week it's a typical prep day in my micro bakery, tweaking and perfecting my new WildFarmed wholegrain sourdough loaf as well as refining my regular sourdough process...
What is WildFarmed Flour?
WildFarmed flour is very special in that it is made from a selection of wheat varieties that have been grown regeneratively alongside other plants and animals; this encourages a thriving biodiversity as well as improving soil health and nutrition of the grain. Healthy soil = carbon sink = reverse climate change.

Thanks for showing the technique. Everyone does it slightly different. It would be nice if you put some of the recipes for your bread up.

Hi! Not sure if I missed it, but what are you weighing the loaves at when you separate the dough before shaping?

900g for my large ones, 750g for small!

How much do you struggle with changing more than one variable at a time. It's an issue I'm really struggling with in my Home Baking of Sourdough.

there are always so many variables you can change but I'd recommend changing only one at a time because then you can see the effect it has on your sourdough :) then try another variable next time and so on... always learning!

I'm curious what your stance is on this, but I have been making the best bread of my life by using cups to measure my ingredients and not using the food scale and grams. I have lost communication with friends who bake over this fact. They are of the belief that I am wrong even though I have failed miserably with their recipes and succeeded with the recipe I got from my nan

intuition in baking is always your number 1 trusty friend whether using a different metric of units :) I would say when it comes to salt however, it may be worth using grams to be more precise
