I would stamp before cutting personally. You can draw around the letter lightly in pencil or punched image if needed and a ruler along top or bottom edge of dies aligns them

What a fun technique! I will definitely give this a try! Usually use fun foam behind my letters to give them heighth. That way I don;t have so much gluing and cutting. Great tips too!
