Ingredients:
- 500 g full fat greek yogurt drained like in the video
- 6 cloves of garlic
- 2 tbsp of olive oil
- 2 tbsp finely chopped mint
- 2 tbsp finely chopped dill (optional)
- 1 large cucumber
- Salt and freshly grinded black pepper
- Extra olive oil to drizzle on top of the finished Tzatziki
1) To drain the greek yogurt, cover a strainer with coffee filters and add the yogurt on top. Place it on top of a bowl, cover it and place it in the fridge overnight or for a minimum of 3 hours.
2) Use a small blender to mix herbs, salt, pepper, garlic and olive oil into an even texture.
3) Add the strained yogurt in a large clean bowl and mix in the oil and herb mixture. Taste with salt and pepper.
4) Cut the cucumber into small pieces and add it into the yogurt and let it sit in the fridge for another hour before serving it with a decent dash of olive oil and delicious, freshly baked bread.
5) Enjoy!
