For my 1st cooking vlog for 2023, I am cooking Pork Bourginon with my Ka-Cook Along winner na si Mommy Mischelle!

Pork Bourginon
Ingredients:
2 kilos U.S. Pork Ribs or shoulder, cubed
6 pcs Bacon
2 whole onions, cubed
2 tbsp butter
2 cans shitake mushroom, halved or sliced
Mirepoix:
1 cup onion, cubed
1 cup carrot, cubed
1 cup celery, chopped
2 pieces red or green bellpepper, cubed
10 garlic cloves, minced
1 tablespoon tomato paste
2 tablespoons flour
1 bay leaf
1/8 tsp oregano
1/8 teaspoon sage
1/8 teaspoon thyme
500 ml red wine
6 pork bouillon cubes dissolved in 4 cups of hot water.
Salt and pepper to taste
Procedure:
1. Saute bacon with meat until brown. Remove 1/2 and set aside.
2. Add the onion, carrots, celery and bell peppers. Sauté. Add tomato paste, thyme, sage, oregano, garlic, and flour. Cook 5 minutes.
3. Pour in the pork stock and red wine. Mix well, scraping bottom of pot to loosen and dissolve all the flavorful brown bits.
4. Bring to a boil, then transfer to a pre-heated 350 degree oven and bake covered for 1 1/2 hours.
5. On low heat, sauté 2 whole onions in butter until lightly browned and caramelized. Set aside. Saute mushrooms in same pan till soft. Add sauteed onions and mushrooms after an hour and a half of baking Pork Bourguignon. Cover and bake for another 10 minutes. Take off the oven. Serve with mashed potatoes or rice.
