I can't believe it took me years before I ventured into the cast iron universe but now I own a 10 inch ("Bubba") and a 12 in ("Bertha") and they are both Lodge. Both cost me less than $30 and I love them. Use them all the time

*I LOVE how he isn't scared to not follow the "flip once" rule. That's a wives tale. I have tried both many times since I started cooking and FLIPPING MORE OFTEN is BETTER.* It doesn't burn your seasonings. It makes more evenly cooked steaks. I'm so glad someone on here is brave enough to prove it.

Also: you don't want lighter weight for cast iron. The whole point of cast iron is our home stoves aren't chef grade, they don't have as much heat. You want heavy cast iron because it has a HIGHER HEAT CAPACITY. That means when you add food to it, it stays at the heat a chef grade burner would provide. That's the whole reason people love cast iron. You want a heavy cast iron skillet. You want to heat it up for quite awhile before you add the oil. Then when the oil is hot (which happens quickly) you add your food, and your food doesn't cool the iron skillet off like it does a normal skillet. I understand they make their money by trying to sell us stuff, but they shouldn't be misleading us to do it.

Well I think that’s why he recommended the two normal weight cast iron pans. But what I wonder, are the enameled cast iron pans (like Le Creuset) easier to take care of? Le Creuset Dutch Ovens and Braisers are great but I’ve never used one of their fry pans.

This video was an absolute winner!! 😋 😋 😋 I just loved the look of that steakhouse meal and that salad! I'm literally drooling 🤤! BUT (isn't there always?) Tony Bourdain (RIP Tony) once famously said about tenting meat with foil, loudly!: "DON'T YOU DARE! LEAVE IT THE F*CK ALONE!! JUST LET IT REST!" So please stop the tenting, especially if you want to retain the crisp sear!! 😁 I've been cooking for over 55 years and I wasn't going to just stop w/out testing it out myself. So I made steaks for hubby and I twice in a week (he thought that was wonderful btw) and tested the temp, the liquid on the steak and the "crispness" of the sear. This was by no means a scientific method, but it did convince me that NOT tenting it does make a difference! The temp difference between tented and not tented was minimum, so it doesn't really make a difference, meaning the foil doesn't keep it that much warmer. It was in the liquid and crust that made the difference. Tenting did leave more liquid on the surface therefore that sear you worked so hard to obtain? Not so much. Test Kitchen/Country Cooks does endless testing on everything. That's why I love the shows! But my own experience convinced me that "Leave it the f*ck alone." is the best bet. (I know CK/CC won't ever see this, but perhaps it will change some folks minds) Hello from Jenn 👋 👋 in Canada 🇨🇦 🇨🇦 🇨🇦

Yes! I've gone from tenting to steak on a baking rack so both sides stay as crisp as possible. Make sure that equipment is warm (or at least not cold)

Love my cast iron pan bought well used at a flea market in 1972. It could easily be 100 years old. I also have several Lodge pans.

I remember going to one of those Japanese Steakhouse. I was I think 7 or 8 years old. The restaurant was in Montreal. We when there for someone anniversary not sure been to long LOL. The food was so good. The way they cook we were all God smack. I want to try that cherry tomatoes salad that look every good. 😋. Hope I will be able to find some of those ingredients

Fresh shiitake mushrooms went out of fashion around here about 8 years ago. All I can get now are white button mushrooms and porta/baby bella mushrooms.

I thought that the steak, veggies, and three sauces was SO GOOD! That is, until I saw that cherry tomato salad!!! ❤❤❤ But it’s feta, ❤ not mozzarella, for me. Once with basil, and then with mint and olives 😊❤ but no fried rice. I’m in love with baked rice, using basmati rice that’s been rinsed until the water runs clear, then soaked in very cold water for at least two hours. You won’t believe how incredibly delicious rice can be until you’ve rinsed and soaked it! I learned this technique from Chaya in the OTK. Thanks, Chaya!

Recently, I have been using Diamond Crystal Kosher Salt Flakes which does not have a chemical aftertaste. I am still trying to experimenting with AMOUNT of salt since Diamond Crystal Kosher Salt Flakes is less salty than other brands.

When I was a kid, we'd grow a couple of “Tommy Toes”, the size of little cherry tomatoes and just as sweet. We'd only plant 2 plants, because they'd grow close to 5ft. tall and would be loaded. BTW, I'm in my late 60's.

I think with the peels on the tomatoes still, the acid is contained and won't break down the polymerized oil. That's my guess anyways

I acutally snipped the basil with scissors... ripping it can cause huge pieces of basil, which can be overpowering... One bite can be nothing but basil, another can be not enough

That version of Japanese steakhouse cooking w didn't resemble Japanese steakhouse cooking. For one thing, they don't cook the Ribeye whole and they don't just use salt and pepper. I was also disappointed that the rice wasn't a part of it.

I’m dangerously allergic to fish, so can never eat anchovies, fish sauce, Worcestershire sauce, etc. And umami or no, fish, in any context, is something I must ALWAYS avoid.
