Ingredients:
- 2 large potatoes, peeled and diced
- 1 large onion, finely chopped
- 1 tsp cumin seeds
- 1-2 red chili powder (to taste)
- 1/2 tsp turmeric powder
- Salt (to taste)
- 2 medium tomatoes, chopped
- 1 cup water
- 2-3 cups fresh spinach, chopped
Instructions:
1. **Prepare Ingredients**:
- Dice the potatoes, chop the onion and tomatoes, and chop the spinach.
2. **Cook Potatoes**:
- Heat some oil in a large pan or skillet over medium heat.
- Add cumin seeds and let them sizzle for a few seconds until fragrant.
- Add the chopped onions and sauté until they become golden brown.
3. **Season and Fry**:
- Add the diced potatoes to the pan.
- Sprinkle with red chili powder, turmeric powder, and salt. Mix well.
- Add the chopped tomatoes and fry the mixture for a few minutes until the tomatoes start to break down.
4. **Add Water and Simmer**:
- Pour in 1 cup of water.
- Cover the pan and let it simmer until the potatoes are tender, stirring occasionally.
5. **Add Spinach**:
- Once the potatoes are tender, add the chopped spinach to the pan.
- Stir fry and mix well until the spinach is wilted and well combined with the potatoes.
6. **Serve**:
- Remove from heat and serve hot as a side dish or with rice or roti.
