Slurping noodles from a steaming bowl is great, but it's not the only way to enjoy your ramen. In Tokyo, a deconstructed style of the dish called tsukemen has become increasingly popular among Japanese ramaniancs. Renowned noodle master Ivan Orkin of Ivan Ramen is one of a handful of ramen chefs who have started to introduce New Yorkers to the gospel of tsukemen, in which cold noodles are dipped into a bowl of extra-potent broth to soak up flavor. Tsukemen is perfect for ramen obsessives who see noodles as the main event.

I've had this bowl of tsukemen before and it's just okay. What I admire about it though is that he doesn't copy anybody and goes with what he wants in a tsukemen.

Tsukemen is my favorite type of ramen! IN FACT here in Tokyo there are many shops that are now incorporating western ingredients in Tsukemen, I made a video about a fried chicken ramen here!

I love eating ramen by myself. Every Thursday I hit the ramen shop on my way home from work. No distractions means I enjoy every slurp, chew and suck. That shit just drips down my face.

Now I don't know how to pronounce tsukemen but Mr. Orkin lived in Tokyo for fifteen+ years and ran his own local Ramen shop for ten of those years, so I can imagine he knows how to pronounce it.

Dylan Camp That makes it a lot worse if he lived there for 15 years and pronounces it like that. The "tsu" is like chicken katsu, the "ts" is pronounced very quickly where the t and the s sound like one letter. You wouldn't pronounce it chicken kas, like he is doing by dropping the "t" and the "u". Maybe if he pronounced tsukemono we could tell.

Had his Tsukemen when I didn't know what it was but the waiter recommended it...i felt like I got robbed. Tried it at another place, and still don't get the appeal.

ive had ramen this way a couple of times and it just seems stupid. i don't see the benefit. my broth just ends up getting cold faster since i dipping cold shit in it.

In 2013, I spoke with him briefly while eating at his first NYC restaurant. He wanted to expand his business which led to opportunities in the U.S. At that time, his Tokyo restaurants were still operating. He has since sold those Tokyo locations to his Japanese business partners.

If it's right, the way in which the hot broth plays with the texture and flavor of the cold noodle is delicious. It does not taste the same as traditional ramen.
